Anyone have pressure cooker tips?

For my birthday last July, my son gave me a pressure cooker and frankly, I've never used one before. My Mom did, but I always thought of them (no doubt very uncorrectly) as a quick way to make a meal out of a tough piece of meat. 1970's stigma, I guess. Blockheaded'ness aside, there is an article in today's Wall Street Journal weekend edition on an adaptation of Julia Child's classic Boeuf Bourgiugnon from Mastering the Art of French Cooking to use a pressure cooker. Boeuf Bourgiugnon in 50 minutes with intense flavor! That's pretty darn amazing. Less than an hour rather than half a day. Said son and wife are coming over for dinner on Monday and I thought it would be cool to try this and show them how wonderful their gift was.

So any tips or lessons learned from your pressure cooking experiences? I always find it best to find out ahead of time what others know before I stumble through and learn the hard way.

Miss Vickie has a wealth of info on cooking w/ a pressure cooker . . . . . . don’t be overwhelmed by amount of info on her site as that is not indicative of pressure cooker being a difficult appliance to use.

Save the water! If you're cooking beans you might want to use the water in a veggie stew or something. It's an idea, I always end up throwing out the water much to my chagrin, as I know it's full of healthy vitamins! :-) Enjoy
