Chipotle Crusted Pork Tenderloin

OMG! So good. First time I made it I only used half of the chili powder and it was too tame. Last night used all of it and it was a bit too hot for my hubby but this is SO DELICIOUS and easy. Definitely going into the rotation at our house. It's now a month later. I have served this several times at parties and every single time I have to send people home with the recipe. This is our weekend 'go-to'!

Easy Chocolate Truffles

Like everyone else, on the first round when I followed the directions exactly, these were a gooey disaster. SO on round two - I used 10 ounces of semi-sweet chips, 5 ounces of unsweetened chocolate, the s/c milk and only 2 tablespoons of butter. Instead of 6 T of flavoring I used 4 T of Amaretto. Also, I borrowed a bit from Ina Garten, after the ganache had chilled in a bowl for an hour, I dropped it by spoonfuls onto a baking sheet, let the globs chill for another hour and then hand rolled them to round and coated with cocao and almonds. WITH MODIFICATIONS this recipe is great.

Spanish Chicken and Rice

This was yummy if you made the tweaks suggested. I used boneless skinless breasts and just browned them with salt & pepper without the flour. I also added a splash of cider vinegar to the chicken broth for a kick. I didn't have pimentos so I used bottled roasted red peppers and also substituted dry mustard for the tumeric. When I put the chicken breasts on the rice before baking I seasoned with more salt, pepper and some hot paprika. For the baking I put the oven at 400 degrees covered for 40 minutes then 15 uncovered and it was perfect. My husband and I loved it - it's a keeper.

Creamy Tomato-Basil Soup

I made this soup yesterday and it was delicious! My husband who won't usually touch a vegetable loved it and had two helpings. It says to strain the soup but we like it chunky so we did not and it was SO good.
