Christmas Stars

I am baking these again this year because they got such rave reviews last Christmas! Although not really a "refrigerator cookie", they are like a linzer torte. This summer I put up seedless red raspberry jam that I will use and really blow people's socks off! They are somewhat tedious but worth it!

Banana Meatloaf

Hey, this isn't so weird if you have ever eaten the food of Puerto Rico! They make a wonderful dish with ripe plantains (like a bananna but not quite as strong-flavored) and ground meat with olives and sofrito (a mixture of onion, garlic sweet peppers, olive oil and tomatoes plus culantro) and either roll it up like pinwheels or layer it like a lasagna. The sweet and the savory are really very good together. I'll bet this rather tastes like that and I am going to try it!

Peanut Butter Chews

I have been looking for this recipe for years since I remember them from grade school! I remember they used to cut them into square bars and sprinkle them with chocolate sprinkles! Thanks for bringing back a childhood memory!

Rueben Loaf

What a delicious recipe! I used 1 Cup of rye flour and caraway seeds in the bread ingredients. I LOVE ruben sandwiches and this was no exception! It is a half-day project though and contains expensive ingredients. Sometimes you just gotta splurge, though!

Lemon Blueberry Bread

Tart and lemony but a bit over powering for the blueberries which just added color to this recipe. Next time I will cut the zest to 1 Tbsp and the lemon juice to 2 Tbsp and increase the blueberries to 1 1/2 cups. Also didn't add walnuts just because that's not my preconceived notion of blueberry lemon bread. Might give it a try, though...maybe hazelnuts...mmmmmm
