Mexican Style Cornbread

I was really impressed with this bread. Don't worry about the spiciness of the jalapenos, the cheddar cheese cools it down nicely. This reheats really well, all of my friends loved it.

Amusement Park Cornbread

This one was alright, came out more 'cakey' and less like cornbread. The flavor seemed more bland because of the amount of flour compared to cornmeal..For people who prefer the cake kind of cornbread, this would be perfect!

Buttery Soft Pretzels

These turned out absolutely delicious!! I found that rolling each piece out to 12" and then allowing them to 'rest' for about 5 minutes made it much easier to roll out longer after they've rested. Otherwise, I didn't do a single thing different than the recipe called to do. :) They were more 'pretzelly' (is that a word?) and not like breadsticks like some other recipes I've tried. Will be making these again :)

Crispy Fish

This was excellent!!! We left out the cayenne pepper (for the kids' sake) and it still had great flavor. I had just pulled a package of frozen fish from the freezer and put it in the cold water while I was mixing the dry ingredients... it was thawed and ready to cook by the time the oil was at the correct temperature. We will use this one many times!!! Thanks :)

Mall Pretzels

This was a great recipe to use for breadsticks, not really like pretzels (too light and 'fluffy'). We found that they were sticking to the parchment paper, so an idea would be to use a greased baking sheet instead of the paper. Definitely the best on the first day. :) As for rolling out to 3 feet, we were able to do that and even longer. We used the *note* and rolled them half way, let them rest, then rolled the rest of the way. The less you handle the dough, the less stiff it becomes.
