Pasta alla Carbonara

I followed the review of user PEGT2865 and made the following changes: Used 1 1/2 lbs of pasta; added 3 cloves of minced garlic to the onions; used olive oil; used 2 pkgs of bacon (1 pkg regular, 1 pkg turkey bacon); increased amount of mushrooms and finally, I added a can of sweet peas. The recipe turned out great!

Linguine and Clam Sauce

I doubled the sauce (but not the linguine) and omitted the oil entirely, using only 1/4 cup (total) of "fake" butter. I also added lemon juice, basil and white wine. This turned out very nicely. Thanks Peg!

Cheesy Ham and Hash Brown Casserole

Very yummy! I didn't use ham or parmesean cheese, substituted low fat sour cream (instead of regular), cream of chicken (instead of mushroom) and used 2% cheddar cheese (instead of whole) and it came out wonderful. I have made this recipe several times and my boyfriend and I love it!

Shrimp and Asparagus

Very yummy! The light lemon butter sauce complements the asparagus and shrimp well. To make this recipe healthier, I only used enough olive oil to coat the bottom of the pan and only 3 tbsp of imitation butter. I also increased the lemon juice to 2 tbsp and added 1 tsp crushed red pepper (as suggested by other reviewers).

Broiled Tilapia Parmesan

I used a low-fat imitation butter spread and Miracle Whip and all other listed ingredients. The tilapia was delicious - very rich but not overwhelming. Be sure to watch the broiler as you cook - the time goes by very quickly and you don't want to overcook the fish.

Chocolate Chip Muffins

These turned out great - I followed the advice of other reviewers and used 1 cup milk (instead of 3/4 cup) and also used slightly more oil. They turned out fluffy, moist and delicious!!!

Caramel-Glazed Flan

I live in the Midwest and it is extremely hard to find a Spanish restaurant that serves delicious flan. I made this recipe exactly as it was shown and it turned out great. Thanks!!!

Killer Potato Casserole

I tried a similar recipe at a friend's house over Easter and loved it; however, I didn't want to use an entire stick of butter in my casserole as she did. Even for this recipe, I used low-fat sour cream, 2% sharp cheddar and added 1 chopped onion and it turned out great!
