Eggplant Tomato Bake
There is no way to go wrong with this. We like eggplant very tender. I baked it at 375 for about 45 minutes and then added pesto to some slices and marinara to others and topped with sliced roma tomato and a bit of mozarella and baked a bit longer. YUM!! Also some I dipped in egg wash and then panko and it was absolutely WONDERFUL! It is also good topped with spinach or basil or anything like a little pizza! So the recipe can be kept just as it is or played with cause it is so very very fun! And so much better than a soggy mess that my eggplant often comes out when I fry it and salt it and make it weep. This texture is perfect. I just need a bushel of eggplants now!

The Very Best Burgers!
Well I did not use Bleu Cheese though I love it..but was most intriqued by the idea of a grated potato. So..I put an onion and a small tater peel and all in the food processor. Gave it a whirl and added it to some 80/20 ground beef. Oh MY!! THIS WAS WONDERFUL!!!! There is no tater taste at all and the burger was luscious and moist and cooked perfectly. Probelm though...it is addictive!

African Peanut Soup
I have made this soup for the last several years. It is excellent. There are so many variations. I usually spice it up with a dose of curry and/or jalopenos. Sometimes I serve shreddeed chicken on the side for the non-vegetarians. I always use veggie stock. I cook the rice first. Everybody loves this soup. Everybody. I add a sweet potato or two. Squash if I have it. Pumpkin good too. Apples. You can't go wrong. Just play. It is peanuts after all.
