Grandmother's Pound Cake II

I took the following suggestions from the invaluable reviews: 1. Add a tablespoon of vanilla. 2. Replace 1 cup of white sugar with 1 cup of brown sugar. 3. Beat the butter and sugar for 5 minutes, and then for another minute as each egg is added. I also beat for a minute after adding the vanilla (which I do after the eggs). Result: A gorgeous, dense, flavorful, buttery cake with a crisp brown crust. For those who like Sara Lee pound cake (and I do) this creates a very similar flavor. Fantastic cake.

Pumpkin Pie Bread

I used the Pumpkin Pie Spice I recipe for the pumpkin spice. I took the advice of a reviewer on there and added 1/4 tsp cloves to that blend--and it's more clovey than I like. I think next time I will make the recipe as stated. So, back to this recipe. As advised by other reviewers, I doubled the spices to 6 tsp, and the pumpkin as well (two 15oz cans vs. one can). I also eliminated the oil entirely, exchanged one cup of white sugar for a cup of brown, and added 1/2 cup of applesauce, and baked for 70 minutes. It came out so perfectly that I'm surprised a blue ribbon didn't materialize on the pan the second it came out of the oven. A perfect chewy crust and a very dense and tender crumb, just WOW. Gorgeous. I'm giving it 5 stars based on that, even though the flavor isn't quite there for me (I'm sure people who like a little more cloves than I do would be delighted with it). Once I tweak my spice blend to my own preference, I bet it will be absolutely divine.

Pumpkin Bread

I was really excited about this recipe since it got so many great reviews. Following the advice of many reviewers, I dropped the cloves to 1/2 tsp, added 1 tsp of allspice, and bumped the cinnamon up to 2 tsp. I also added 1 tsp of vanilla. The batter was thick and made one large cake and one small loaf. Well, I just tried the loaf (it's been cooling on my deck for about 45 minutes, one advantage of a MN winter) tastes like pumpkin bread would taste if I sprayed Pumpkin Spice Glade air freshener all over it. Strong taste of cloves and allspice, can't even taste the pumpkin. I can't imagine what using the cloves as directed tastes like. Most of the pumpkin breads I've had taste like pumpkin pie, only bread, and that's what I was hoping for. This is not it. I dunno, maybe it'll be better in the morning, but right now I'm not impressed. The only reason I'm giving it two stars is because it did have a very nice texture and baked beautifully. Too bad I can't eat it.
