Zucchini Brownies

Reviewed: Sep. 23, 2009
Great. Used dark chocolate cocoa powder. Tasted wonderful. I did not ice the brownies.

Quick Lemon Dijon Chicken

I added some honey (about 1/4 cup) and cooked for a while longer to have the sauce reduce. Very yummy.

Roasted Vegetable Medley

Very good. I followed others suggestion of cooking the zucchini part at 400 degrees for only 20 minutes. Worked perfectly.

Tilapia with Tomatoes, Black Olives and Corn

Reviewed: Sep. 8, 2009
Could use more spice. I would not put all the juice in because it did not cook down at all. Very watery. Serve with rice or couscous for sure! I'll try it again, but I'm going to change it a bit.

Fresh Rhubarb Pie

Reviewed: Jun. 28, 2009
Tastes good, but the edge of my pie burnt. Next time I'll cover the edges in aluminum foil for the first part.

People love this! Have made it 3 times and every time it's a hit. I like to serve it with tortilla chips.

Easiest Pot Roast Ever

Reviewed: Mar. 1, 2009
This was really good. I put the veggies on top of the meat because I like the meat to be falling apart tender. I made it both ways (veggies on top and bottom of meat) and I prefer veggies on top.

Very good. I used cheddar since that's what was in the fridge. Delish!

Quick and Easy Pizza Crust

Reviewed: Mar. 1, 2009
I have made this 8 times so far. It's really great. I roll it out really thin and poke holes in it with a fork. I like thin crust. I put cornmeal down on my pan underneath crust - tastes great! I have used this for large pizzas and individuals. I get three individual crusts out of one recipe.

Dried Beef Ball

Too salty for me. Next time I will rinse off the beef before chopping. Other than that - tasted great. Will make again.

New York Cheesecake III

Reviewed: Jan. 12, 2009
Tasted great. Loved the crust. I undermixed because I read a review that said overmixing will cause cracks. Mine had lumps of cream cheese in it due to undermixing - so don't undermix like me. Mine had a small crack in it anyway. Still looked and tasted great. Will make again and use Kitchenaid mixer.

Spruced Up Mashed Potatoes

Reviewed: Nov. 28, 2008
I added two cups of fat free sour cream. Next time I will put the cauliflower in the food processer before I mash it altogether. The hand beater doesn't break up the califlower as much as I wished it would and the end product was lumpy. Will make again.

Real N'awlins Muffuletta

Reviewed: Sep. 27, 2008
Very good. I would say this has 10 large servings or 20 small servings. It cost me about $40 to buy the ingredients. Worth the cost considering how much is makes. Very good sandwich. Nice change from the normal tailgating foods.

Beth's Spicy Oatmeal Raisin Cookies

Very good recipe. I only used butter (not shortening and butter) and I omitted the raisins. Tasted great right from the oven and four days later.

These are awesome! They also were very easy to make. This one is a keeper. Not too sweet, creamy yet a little crumbly.

Chocolate Pinwheel Cookies

Reviewed: Dec. 9, 2007
I love these cookies. I used 3 tbsp of cocoa powder instead of the chocolate square to make the chocolate half of the dough. I got 24 good looking cookies but also 6 not nice looking ones because they were the ones cut from the ends of my roll - so that was expected. These cookies are very impressive looking and have a light chocolate flavor to them.
