Gluten-Free White Bread for Bread Machines

This is the best bread I have tried to date! I have allergy to wheat, gluten, dairy & egg so this is what I did: I didnt use rice at all (trying to avoid too much of it) Did 1 cupe oat flour, 1/2 cup sorghum, 1/4 cup flaxmeal (grinded it up, helps with binding since I used no eggs) & 1/4 up buckwheat. Omited eggs and used 3 TBSP applesauce mixed with 1 tsp baking powder and used 1 TBSP egg free mayo mixed with 3 TBSP water & 1 tsp baking powder again. I found I have to use less than 1.5 cups buttermilk, more like 1 1/4 cup, even though I didnt subsitute the 3rd egg. I didnt use cornstarch, used tapioca. I mixed it in my bread machine but transfered the batter into my bread loaf pan and put it in the oven instead. To make dairy free buttermilk: 1 cup non-dairy milk (i.e. soya milk) mixed with 1 TBSP apple cider vinegar or even lemon juice (I always use ACV though) Let sit for a couple minutes.

Bread Machine Spelt Bread

I make this nearly every week. Couple things I did differently for a better rise: 2 tsp xanthum gum, 1/4 tsp ginger powder, 1/2 tsp salt, and 2 1/4 tsp bread machine yeast. I get a really high rising spelt bread. Just like a regular wheat bread. Sometimes, I omit the honey and just use sugar and put a tablespoon or so of water if it looks dry. Also, I dont use milk powder. :-) Hope this helps someone.

Whole-Grain Pie Crust with LIBBY'S® Famous Pumpkin Pie Filling

My first time EVER making a pie and I used this recipe! OMG !! Awsome, delicious! There are still some tricks and things that I have to learn and pick up with the pie shell but otherwise, easy to follow instructions and the end result was amazing. I was actually surprised that I made it! My husband doesnt even like pumpkin or pumpkin pie and he just loved it! Just as good as any restaurant style pumpkin pie. The only thing I changed was used half brown sugar and half granulated. Being Indian I of course had whole cloves and cinammon sticks in my cupboard, which I grinded up so you can imagine the smell of this pie! I'm definitely gonna save this recipe to use for like ever! Anyone who is looking for a recipe for this kinda pie . . try this one . . you wont be disappointed!

Best Cream of Potato Soup

My first time making this kinda soup and turned out great. I only made enough serving for 2 as I actually made it for my VERY fussy 17-month-old eater. . . I should've made more! I did not have parsley and allspice and did not obviously use wine, cayenne pepper or bouillong powder. I also did not use chicken broth . . . I used veggie broth instead. I do admit it was a bit thick. I actually had to add a tiny bit of water (apx 1/4 cup) as it was getting so thick the potatoes were not cooking. I also think next time I will maybe not even bother using the flour. All in all, pretty good. Lets see what my liltle one has to say once he wakes up from his nap!

Oatmeal Raisin Cookies IV

The flavor of these were AMAZING. I did change it quite a bit though so I could use brown spelt flour, used coconut oil instead of butter, used coconut sugar instead of brown sugar . . . only thing is I found it a little too sweet for my tastebuds so I will reduce maybe by 2 TBS (I made only a dozen). I doubled the cinnamon and omitted the pecans. It spread out just enough . . so still nice and soft yet crispy on the outside. My cookies finally look like the picture of a recipe ! ! I am definitely saving this recipe. THANKS FOR SHARING !!

Bread and Celery Stuffing

I followed recipe nearly exactly. I was so glad I didnt have to use eggs as my son is severely allergic! I wanted a little more color so instead of using 4 stalks celery, I used 3 and then I used about a half of a red pepper. Nobody could believe I made it ! (I couldnt either !) I WILL NEVER buy boxed stuffing again. This is sooooo easy and quick to make. You could add whatever spices you like. I added just a little bit of thyme & sage. Oh and I had leftover whole wheat bread and spelt bread which I make in my bread machine so I used a mix of it. It didnt get soggy, which I was worried it would especially reading some reviews ! Awsome and perfect ! THANKS SO MUCH.
