Sweet and Sour Pork Tenderloin

Reviewed: Jan. 24, 2015
A word of caution concerning the spices used in this recipe. I cooked this for the first time last night and it came out very spicy. I used Sriracha hot sauce as suggested and tasted the sauce before cooking it and it was only mildly hot. But after cooking the sauce it had a great flavor but was so spicy hot that it was almost uneatable. I may have stumped my toe with the red pepper flakes. I added a couple of dashes instead of a pinch.

Southwestern Style Chalupas

Reviewed: Dec. 12, 2014
I made the mistake of soaking the beans overnight and did not reduce the amount of water and this came out soupy. After 4 hrs on low the roast was nowhere near tender enough to shred. I had to cook it 4 more hrs on high before I could shred the roast. While this smelled good while cooking it tasted bland. It needs something but I'm not sure what.

Hillshire Farm® Sausage Alfredo

Reviewed: Nov. 29, 2014
Came out a little greasy and not much flavor. Might be better with the hot Hillshire Farm sausage.

Slow Cooker Pork Cacciatore

Reviewed: Nov. 8, 2014
Cooked this as directed and it came out ok but not as good as I hoped. Pork just does not go well with all of the tomato. May try a sage pasta sauce next time or add a teaspoon of ground sage.

Taco Casserole

Reviewed: Sep. 27, 2014
This was easy to cook and good but not great. We added black olives to the toppings which helped. This recipe has potential and would be better if you kick it up a bit with a couple of diced jalapeno peppers cooked with the beef mixture. We may try this again using fritos style corn chips instead of the tortilla chips.

Garlic Shrimp Linguine

Reviewed: Sep. 25, 2014
Took the suggestion of another reviewer and doubled the sauce and halved the linguine. With that change their was too much shrimp and not enough linguine. Also the sauce was too thin. Need to work on the proportions and cook the sauce longer next time. Stay tuned.

Cheesy Italian Tortellini

Reviewed: Aug. 30, 2014
This came out very good. I was tempted to add garlic and onion but didn't. The only change I made was to use Parmesan cheese instead of cheddar as suggested by several reviewers. After tasting I think I will use a extra sharp cheddar the next time I make this.

Chef John's Classic Beef Stroganoff

Reviewed: Aug. 25, 2014
Cooked this as written after making the creme fraiche 3 days ago. Has a really great flavor. I halved the recipe as their are only two of us and put up half of that before adding the creme fraiche. I used part of a chuck roast we had left over and it wasn't a good cut or real fresh. I'll use fresh chuck roast next time.

Chicken Enchiladas II

Reviewed: Jul. 30, 2014
A good start but would be even better with a little spice and good enchilada sauce.

This turned out very good. The second time I cooked this I used the shredded chicken from ltlmsmfft's Slow Cooker Cilantro Lime Chicken and it came out even better. The leftovers are melt in your mouth flavors.

Hot Tamale Pie

Very good but has a lot of cornbread. I could not find the poblano peppers so I used a green bell pepper.

Came out more like soup. I will cut back on the chicken broth next time. I used chicken thighs to make my own broth.

New Year Spinach Fettuccine with Scallops

Reviewed: Jan. 5, 2014
Made this with shrimp instead of scallops and it came out tasting very good. Used 2 tablespoons of olive oil with the spinach which was too much. I will use only 1 next time.

Baked Penne with Italian Sausage

Reviewed: Dec. 9, 2013
Cooked per the recipe and it was a little too tomatoey for me. Overpowered the sausage. Will not use tomato paste and use a jar of garden style spaghetti sauce instead of the 15 oz. can of tomato sauce if I make it again.

Fabulous Wet Burritos

Reviewed: Oct. 24, 2013
I have cooked this many times baking it in 350 degree oven for 25 minutes instead of microwaving. I also put a little of the sauce in the bottom of the 9 by 13 baking dish before adding the enchiladas. I also add a small can of sliced black olives with the green onions. To spice it up I use a pound of Kris' Amazing Shredded Mexican Beef instead of ground beef.

Angel Hair Pasta with Garlic Shrimp and Broccoli

Reviewed: Sep. 25, 2013
This is a very good recipe. The sauce is wonderful and went very well with the shrimp and broccoli. We had to hunt for the jumbo shrimp. We may have cooked too much pasta. Next time we make we are going to use 1 1/2 lbs of smaller shrimp and less pasta.

Colleen's Slow Cooker Jambalaya

Reviewed: Jun. 24, 2013
I have cooled this 3 times and it has always turned out great. The last 2 times I used chicken thighs with the bones and skin. After cooking I removed the skin and bones and used the cooking broth instead of canned chicken broth. I have also added a pound of cubed ham for a more meaty jambalaya. We always have a lot left over so we cook the rice separately each time we serve this. The left overs get spicier and taste better.
