One Pot Tuna Casserole

This was just ok. Too many noodles for the tuna, soup, milk and cheese. If I make it again I will halve the noodles and use 2 cans of tuna and soup.

Chef John's Beef Goulash

This came out pretty good even though I did not have 2 of the ingredients, caraway seeds and balsamic vinegar. I substituted 1 tsp of crushed cumin seed and 1 tsp dill seed for the 2 tsp of caraway seeds and apple cider vinegar for the balsamic vinegar. Chef John always adds a little cayenne pepper to most of his recipes and I usually like that but 1/2 tsp was a little too much in this recipe. I served this over ribbon noodles with a dollop of left over creme fraiche. I will get all the correct ingredients and make this again with 1/4 tsp of cayenne pepper and update my review.

Santa Fe Stew

This came out very tasty but there is a lot of it. My 15" cast iron skillet was full after adding the tomato products and corn. I had to transfer it to a my large stew pot to finish adding the beans. The volume of the ingredients adds up to over 5 quarts so unless you have a very large deep skillet I suggest you brown the onion and ground beef in a large skillet, add the taco seasoning and ranch dressing mix and the can of diced tomatoes and then transfer the mixture to a stew pot with a slotted spoon. The diced tomatoes will deglaze the skillet so you won't loose the the browned beef flavoring. Add the remaining ingredients to the stew pot except for he chicken broth. Add chicken broth to get your desired thickness and simmer for 1 hour.

Easy and Delicious Slow Cooker Cassoulet

The ingredients in this recipe meld together very well making it a unique and tasty stew. I made this 4 days ago and it was very good. Since it is just me and my wife we had a lot left over. We had part of the left over stew last night and it tasted even better than when it was first made. I did not change anything and see no need to either.

Sweet and Sour Pork Tenderloin

A word of caution concerning the spices used in this recipe. I cooked this for the first time last night and it came out very spicy. I used Sriracha hot sauce as suggested and tasted the sauce before cooking it and it was only mildly hot. But after cooking the sauce it had a great flavor but was so spicy hot that it was almost uneatable. I may have stumped my toe with the red pepper flakes. I added a couple of dashes instead of a pinch.

Southwestern Style Chalupas

I made the mistake of soaking the beans overnight and did not reduce the amount of water and this came out soupy. After 4 hrs on low the roast was nowhere near tender enough to shred. I had to cook it 4 more hrs on high before I could shred the roast. While this smelled good while cooking it tasted bland. It needs something but I'm not sure what.

Slow Cooker Pork Cacciatore

Cooked this as directed and it came out ok but not as good as I hoped. Pork just does not go well with all of the tomato. May try a sage pasta sauce next time or add a teaspoon of ground sage.

Taco Casserole

This was easy to cook and good but not great. We added black olives to the toppings which helped. This recipe has potential and would be better if you kick it up a bit with a couple of diced jalapeno peppers cooked with the beef mixture. We may try this again using fritos style corn chips instead of the tortilla chips.

Garlic Shrimp Linguine

Took the suggestion of another reviewer and doubled the sauce and halved the linguine. With that change their was too much shrimp and not enough linguine. Also the sauce was too thin. Need to work on the proportions and cook the sauce longer next time. Stay tuned.

Cheesy Italian Tortellini

This came out very good. I was tempted to add garlic and onion but didn't. The only change I made was to use Parmesan cheese instead of cheddar as suggested by several reviewers. After tasting I think I will use a extra sharp cheddar the next time I make this.

Chef John's Classic Beef Stroganoff

Cooked this as written after making the creme fraiche 3 days ago. Has a really great flavor. I halved the recipe as their are only two of us and put up half of that before adding the creme fraiche. I used part of a chuck roast we had left over and it wasn't a good cut or real fresh. I'll use fresh chuck roast next time.

This turned out very good. The second time I cooked this I used the shredded chicken from ltlmsmfft's Slow Cooker Cilantro Lime Chicken and it came out even better. The leftovers are melt in your mouth flavors.
