Sausage con Queso Dip

This is a great recipe for parties. I use the hot sausage and you can add tabasco or a can of green chilis for an extra kick. Make sure you have plenty of corn chips!

Cream of Mushroom Soup I

I wanted to try this after having the one at La Madeleine. It was very good, but too thick. I added more half and half and butter. I'm sure I could have done that with stock, I will try that next time. The soup is great with crusty bread. I used baby bella and button mushrooms so I could get more depth to the flavor. I am a big meat eater, but found this soup very satisfying. I will make this again.

Cake Style Peach Cobbler

I've been making this for about a decade and everyone loves it. You may substitute almond extract for the vanilla and add in toasted walnuts for a nice crunch.

Grilled Bacon Jalapeno Wraps

I've been doing these for many years. I add 1/4 - 1/2 cup crab, 3/4 t old bay, 1/2 t lemon pepper and 1/2 t pepper. Mix well, but leave some of the crab in chunks. Grill or place in the oven at 400 for 20-30 minutes, keep an eye on them. Enjoy!

Giant Crisp Chocolate Chip Cookies

Since this was the first time I used this recipe, I followed it as stated, except I didn't have walnuts so I used pecans. I am so happy I found a crisp cookie recipe. They have a wonderful butter flavor. These are perfect if you are a dunker. We dunked them in milk, but I'm sure they would be great with a latte as well.

Pumpkin Gingerbread

This is the best pumpkin bread I have every baked (so far.) I added an extra teaspoon of cinnamon and added in 2 t. of vanilla to the measuring cup before I added the rest of the water to measure 2/3 cup. I also added dark chocolate chips to one half of batch, that way had one loaf with chocolate and one without. I served this with homemade honey butter spread and coffee. I will take this to Thanksgiving dinner along with another couple of desserts.

Busy Day Barbeque Brisket

This is a really smart idea for brisket. Since I was in a rush Friday morning, I just went the lazy route. I used a large crock pot, added the brisket. along with 1 1/2 cups of beef broth, 4 garlic cloves, 1 T. worcestershire, 2 t. kitchen bouquet, salt and pepper. This cooked for 11 hours on low and was super delicious. Again, great idea for a brisket.

Baked Potato Soup

This is good, but I changed a couple of things. I made extra bacon, used heavy whipping cream instead of half and half and pureed the soup once it was done. Really good in a bread bowl or with crusty bread and a ceasar salad.

Seafood Fettuccine

Instead of 2 cups of half and half, I used 1 1/2 cups of heavy cream and 1/2 cup of butter. Instead of 1 cup of onions, I use 1/4 cup of shallots. I used snow crab instead of scallops, this time around, but either work well. At the end I add the zest of 1 lemon and the juice as well. If you let the warm pasta sit in the sauce (without the seafood) for about 10 minutes, the pasta will soak it up and make it creamy.

WOW, this is good! This is really good with fried or white rice. I would double the sauce and would toast the walnuts in the oven instead of putting them in the sugar water. I will make this again.

Lemon Pie Bars

Good tart lemon bars. The crust tastes like shortcake, which I love. Make sure they are completely cooled before you sprinkle the confectioners sugar. The recipe does not make 32, though. These are a big hit at home and with the neighbors. They are pretty close to the ones Starbucks use to sell a good while back.

Banana Pumpkin Bread

I took these to work and everybody loved themI added 2 t. of vanilla extract, 2 t. of cinnamon instead of one, 1/2 c of walnuts and omited the raisins. It was funny though, some of us tasted more pumkin and others tasted more banana. Either way, they were great. I did muffins.

Tortilla Soup II

This is really good! Instead of flour tortillas, I used corn tortillas. I made the soup following the recipe. And then I had diced avacado, fried strips of corn tortillas, chopped cilantro, shredded cheese and sour cream in bowls so everyone could customize their soup bowl. Double or triple the recipe, it's delicious.

Migas II

I add fresh jalapenos, tomatoes and onion. I'm not a tomato fan, so I leave them out. You should saute' one jalapeno and 1/4 cup onions before adding in the eggs. (I remove seeds and inner membrane of the jalapeno for less heat.) I add a pat of butter once everything is combined. Great on a warm flour tortilla with fresh avocado or serve burrito style.

Homemade Dog Food

I make something similar to this, however, I use chicken livers instead. I boil the livers and chop them finely and use a rice steamer for the rice. Once the rice is done, I add in the frozen peas and carrots and let them warm through. I mix the liver, rice, veggies and broth together. Once cooled I put them in freezer bags and freeze until I need it for the pups. So easy.

Simple Scones

These are the best scones I have ever eaten! I'm a top notch baker but even thought this recipe is easy, it doesn't skip on the flavor. The first time I made these, I did dried crannberry with orange zest. The second time, I did fresh blueberries with walnuts. I liked the cranberry recipe best. Bust my husband and daughter liked the blueberry. I made a frosting for the left overs. It had confectioners sugar, almond extract and orange juice. I dunked the scones in when they were completely cooled. And they were excellent with coffee the next day.

Creamy Baked Cheesecake

I have been making this for years. I do not add the sour cream and cherries though. For the holidays, I make white chocolate rose leaves; just melt white chocolate and spread onto clean real rose leaves, place in the refrigerator for 10- 15 minutes and peal leaves off, place on top of cheesecake. I also make miniature cheesecakes via the miniature cheesecake pan. The small ones are great for parties.
