Picadillo (Cuban Beef Hash)

Love this recipe! I cut back the olive brine to 1/4 cup and used crushed tomatoes in place of tomato sauce and it turned out absolutely delicious. Served with white rice and black beans. I will be making this again!

Chicken Pineapple Fajitas

A nice variation to traditional fajitas. I used red, yellow and orange bell peppers and sweet onions along with the pineapple. Delicious!

Sweet and Sour Meatballs II

I made this and my family loved it! A welcome new addition to my menu planning. I did have make a few alterations due to ingredients on hand and it still turned out delicious. I used Balsamic vinager (3 TBLSP) in place of cider vinager, teriyaki sauce in place of soy sauce and added some Worcestershire sauce (3 TBLSP) to the meat mixture. Yummy!

Soft Gingersnaps

An awesome cookie! I was hesitant to make gingersnaps at first and so glad I went with this recipe. I just made these and I can't believe how delicious they turned out. Slightly crispy around the edges and soft and chewy in the center. I rolled them in red sugar and then flattened with my thumb before baking and they were perfect! Yummy!!
