Asparagus Side Dish

This is a great simple side dish especially since its asparagus season. I pretty much followed the recipe as written except I cut the steaming time to 5 min. and added some fresh baby spinach leaves to the asparagus while it was steaming. Will definitely do it again. Thanks.

Fish Tacos Ultimo

We really enjoyed this recipe but made a few changes. I used red snapper instead of tilapia and fried on stove (will grill next time). For the sauce, I used mayo (didn't have yogurt) and dried cilantro. I used lettuce instead of cabbage and no cheese. Will make again.

Easy and Elegant Pork Tenderloin

After reading other reviews, I also marinated the pork on a zip lock bag with olive oil and various spices and then cooked as per the recipe. Turned out very good - will make again.

Easy Batter Fruit Cobbler

After reading other reviews, I used peaches and blueberries and doubled the quantity. I also used 1/2 c. sugar and 1 TBS of brown sugar and 1/2 tsp of cinnamon. It turned out very good. Will definitely make again. Thanks for the recipe.

Alaskan BBQ Salmon

First off, I had to readjust the servings since there are only two of us (ever tried to do an 1/8 of a dash??) I used just a fresh filet of sockeye salmon and the results were excellent and the recipe couldn't be easier. My husband kept saying "this is good, this is really good!" and I whole heartedly agree so this is going in the "definitely do again" list. Thanks for the recipe!

Awesome Slow Cooker Pot Roast

I only had a small roast so I just used one can of soup, replaced the onion soup with a package of au jus and used red wine instead of water. I also browned the roast prior to putting in the crock pot. It turned out excellent! Will definitely make again and may try a different type of soup. Thanks.

Steakhouse Ribs - New York Style

I used the cooking technique but only the ribs. I had my own homemade rub which I rubbed on the ribs a few hours prior to BBQing, wrapped in plastic and put in fridge. After BBQing for about 45 mins. I used a store bought rib sauce and the ribs turned out great - perfect tenderness but the meat did not fall off the bone which is what we like. Thanks.

Quick Black Forest Cake

I used thawed pitted cherries instead of the pie filling - used the cherries plus the juice. based on the other reviews, I cut the almond extract to 1 tsp. and omitted the chocolate chips. I also didn't make the glaze and topped with either Cool Whip or ice cream. We both liked very much.

Wrapped Salmon

After reading other reviews, I added thawed chopped spinach under a salmon filet and mixed honey dijon with mayo, lemon juice and some dill (I never measure so I can't tell you how much). I also used four sheets of phyllo. I only had to bake the salmon for about 18 minutes otherwise the salmon gets overdone. Will keep this recipe and definitely use again.

Grilled Asparagus

Best way to eat asparagus as far as I'm concerned. I also tried marinating it in an Italian dressing and a sun-dried tomato dressing - both turned out great. I also only used one skewer since the spears tended to split.

Fish Chowder

Can't give it 5 stars as I altered the recipe somewhat. I cut the recipe in half as there are only two of us. Used all chicken stock and no clam juice. Added 1/2 can of creamed corn and 1/2 can of evap. milk plus a handful of shredded cheddar. I also fried up the bacon and sauteed the veggies in the bacon fat and put the crumbled bacon on top. Very good will make again. Thanks for the recipe!

West Coast Cod and Shrimp

I can't give this five stars because I made some changes based on other reviews. I cut back on the garlic as we are not big fans, sauteed the mushrooms with the onions, used evaporated milk instead of heavy cream, added some tarragon and cut back on the dill, used shredded Italian four cheese and baked uncovered. My husband loved this version. Will definitely make this again.

Salmon Chowder

Excellent chowder. Used fresh salmon that I poached in the microwave first (easy way to do fish) and used minced garlic instead of powder. Will definitely try again and will try adding some sun-dried tomatoes next time as suggested for colour.

Slow Cooker Chicken Stew

Very good - my husband really liked this. I followed some other suggestions and cut the potatoes smaller as well as the onions. I also added carrots and only one apple as that is all I had. I used cream of chicken soup but I'm sure just about any cream soup would work well. I'll keep this recipe. Thanks.

Crab and Shrimp Delight

I altered this recipe based on other reviews. I only had imitation crab and cream of mushroom soup so I used that. I also used orzo pasta and mixed mayo, Miracle Whip and cream cheese to measure one cup. I also mixed the sharp cheddar in with the soup mixture rather than putting on top. I baked this an extra 10 minutes uncovered to ensure that the pasta was cooked. Both my husband and I really enjoyed this dish and I will try this again and use a different cream soup and maybe different cheese. This is a keeper.

Best Bread Machine Bread

Really like this bread recipe. Used olive oil and mixed multigrain and unbleached white flour. Rises pretty high (can't fit in the toaster) so I used a longer loaf pan and it can out great. Will use this again and aain.

Easy Turkey Chili

Pretty good. I used a can of bean medley (kidney beans, romano bean and black eyed peas) and a can of chick peas. Didn't care for the addition of the chick peas will stick to kidney and black beans. Also didn't have refried beans. Added some chopped peppers. Will try again using the proper beans. I also added some chipotle chili pepper powder to make it a bit spicier.

Apple Crisp II

Great recipe. I cut it in half since its just for me and my husband and I also added nutmeg and cut the water amount in half. My husband prefers the apples to be a bit "saucy" and this recipe does that. Can't give it five stars since I altered it a bit but otherwise a great base recipe. Thanks.
