Fisherman's Quick Fish

This recipe was very easy to make, tasty and very forgiving on ingredients. I used tilapia filets, regular Italian dressing and crushed Boulder Canyon Rice & Bean chips as that was what I had on hand and shredded cheddar cheese. My husband thought it was very tasty, as did I, though I may have cooked the tilapia a minute or 2 too long as they were thin filets and probably cooked fast! Very happy with the recipe though!

Black Bean and Couscous Salad

I brought this to a cookout yesterday and everyone loved it. It is so easy to make, yet is so flavorful! My only changes (on suggestion of another reviewer) were to double the lime juice, vinegar & cumin; swap out the green onions for 1/8c red onion; add 1/2t ground coriander & 1/4t dried oregano. I used frozen shoepeg corn. This recipe was a winner as well as the Watermelon Salsa (from this site) that I also brought along.

Watermelon Salsa

I brought this to a cookout yesterday and everyone loved it. I did only use 1/2 c of onion as some suggested. I did add Tabasco, but next time may use jalapeno pepper. This recipe was a winner as was the Black Bean & Couscous Salad (from this site) that I also brought to the cookout.

Excellent and Easy to make! Doubled the sauce and did add a little sugar to the sauce. Used 1T dried basil. Hubby loved it!

Pumpkin Pie Bars by EAGLE BRAND®

A bit too rich and a bit on the soggy side, best eaten with a fork. Not as much flavor as I had hoped for. I followed recipe ingredients with the exception of using "I Can't Believe It's Not Butter for Baking", and only using 5/8c (10T). Cut bars into 32 pieces.

Chocolate Chip Banana Muffins

Excellent muffins!!! I took the advice to use only 1/4 c oil and 3/4 c yogurt and they came out very moist. Also, I used 1 c wheat flour and 3/4 c white flour. Delicious!!

Yellow Squash Casserole

This was very tasty and easy to make - a good use of excess summer squash! I added 1 pound of Italian turkey sausage - sliced and sauteed with the squash and onions to make a main meal.

Apricot Chicken

I was expecting this recipe to be more flavorful. It seemed that it was missing something - maybe fresh ginger and ground ginger? Also I used low sodium soy sauce, so maybe that didn't season as well. Added some Tabasco, and that helped a bit. Easy to prepare though.

Quick Cassoulet

Very tasty! I made this while we were camping, very easy to prepare and hearty. Followed the recipe, but added cumin, basil, crushed red pepper, juice from the tomatoes and simmered longer for bay leaf to season.

Grilled Sausage with Potatoes and Green Beans

Excellent camping recipe - easy to prep and easy cleanup!! Followed others suggestions of additional herbs, crushed red pepper and substituting italian dressing for the oil. Used turkey kielbasa to cut down on the fat content.

Chili I

An excellent basic chili. I took this camping and was a great meal by the campfire! My only modifications were to omit the salt and 6 oz of tomato paste (to cut back on the sodium). As with all chilis, I try to make it a day before and serve the next day to allow the flavors to blend.

Win's Shrimp and Spaghetti

Excellent - very easy meal to make! The first time I made it tasted to peppery (could be the type of Creole seasoning I use) which overpowered the dish, so the second time I omitted the pepper and was very pleased with the results.

Pasta Lasagna

Very easy and tasty substitute for lasagna! Used 3/4 lb of rotini and baked in a 9 x 13 dish, covered. Substituted sweet Italian turkey sausage for the beef.

Surprise Banana Cake

Like banana bread, but not in a loaf! Very flavorful and moist. Did not need frosting. Used 5 bananas and substituted 1/2 cup of applesauce for the oil for a healthy version.
