Blueberry Zucchini Bread

I have made this twice. The first time I used Pam and the second time I used Crisco shortening to grease the pans. Although the flavor is good, both times only the top half of the loaf came out of the pan. If you are looking for something to give as a gift, this is not the one.

Chicken Enchiladas I

Great recipe. I used previously grilled chicken breasts. I also sweat the onion and green pepper briefly because I didn't want crunchy vegetables. Omitted the water because it was already soupy. Excellent! I will make again and again.

Old Fashioned Onion Rings

I have to say that I have never had a crispier onion ring. I used the Panko bread crumbs and I am sure that made the difference. There was not enough flavor, though. The next time I make these I will add 2-3 teaspoons of seasoned salt into the flour. I think it will give more even flavor than sprinkling it on after. All-in-all a great recipe.

Tasty BBQ Corn on the Cob

This was pretty good. I had never tasted spicy corn before. I have been grilling corn for many years, but with just butter and salt. After buttering, wrap the husks back around the corn before you wrap in the foil. This prevents the corn from burning.

I followed this recipe exactly and it was totally tasteless. I gave it two stars instead of one because it was very crispy. I won't be making this again.

Parmesan Artichoke Casserole

I have something very close to this recipe in my appetizer file. The only difference is I use 3/4 cup of mayo, 1/4 tsp. garlic powder, and I chop up the artichoke hearts. Serve with Club crackers. Yum yum!
