Banana Nut and Ginger Bread

Not your average banana bread. I halved the recipe, omitted cardamom, used dried ginger and about half the amount of walnuts called for. I also used 1/2 ww flour. It has a very deep flavor, and I'm thinking would be well received by those who enjoy a spicy cookie. Great recipe, I'll definitely be making it again!

Lentil Vegetable Soup

Yum! I added a few stalks of chopped celery w/ leaves, an extra cup of stock, and cooked it all day in the slow cooker on high (didn't sautee veggies). I added 1 Tbsp dried mint at the beginning, did not puree, and added yogurt to individual bowls before serving. Everybody in my family loved this and every last drop was eaten within 2 days!!

Bagel Bread

Exactly what the other reviewers have said this is- a wonderful bread with a crispy, chewy crust. Wonderful with soup! I added 1 Tbsp dried, minced onion and 1 tsp garlic powder and it turned out very well!

Downeast Maine Pumpkin Bread

No need for any other pumpkin bread recipe! Even after making it healthier (egg sub, subbed 1/2 of the oil w/ applesauce, and 1/2 of the flour w/ ww flour and used a little less sugar), this bread is delicious!

Incredibly rich and very, very good! I made them as the recipe is written, but I think next time I'll use less margarine and possibly swap some out for unsweetened applesauce.

Libby's® Pumpkin Cranberry Bread

Great recipe! I used 1/2 ww and 1/2 all purpose flour, 1/2 applesauce and 1/2 canola oil, 3/4 C of egg sub, dried cranberries instead of fresh or frozen, and finally, 3 C of sugar sounded like an awful lot. My kids like to have bread for snack sometimes, and I thought it could handle less sugar, so I used about 3/4 C less sugar. It tasted great! As a side note, I usually use 4 mini loaf pans instead of 2 bigger ones, and this time the batter overflowed just a tad. It didn't effect the taste at all, but the loaves weren't quite as pretty.

Butterscotch Gingerbread Cookies

So delicious! Soft, chewy, and the PERFECT cookie to make healthier because the flavor is out of this world! I didn't think they were too sweet, and the spices were just right for me. I did use light margarine, egg substitute and 1/2 ww flour. Baked at 335 for 11 minutes. This will be making an appearance on my Christmas cookie platters!!

Pumpkin Ginger Cupcakes

I didn't realize I was out of cloves, so I didn't use that, but I did add some pumpkin pie spice. I also couldn't find crystallized ginger. Instead of butter, I used 1/2 light margarine and 1/2 applesauce. I used 3/4 C of egg substitute. Topped with cream cheese frosting. So, so good! Very dense, but moist cupcake.

Whole Wheat Snickerdoodles I

Made these healthier by using egg substitute and light margarine. I baked them for 9 minutes on parchment paper- perfect! As a side note, if you do not like whole wheat, these cookies will not be your cup of tea. Most of the grains that our family eats are whole grains, so these cookies are right up our alley!

Cottage Dill Bread

Delicious! I used a regular sized pkt of yeast, onion powder in place of minced onion (will definitely try it with minced onion next time), all purpose flour since I didn't have bread flour on hand, and some dill weed in addition to the dill seed. I did warm the cottage cheese and margarine in the microwave for about 45 seconds. The loaf rose beautifully!

Banana Butterscotch Bread

Soooo good! I made it healthier by using 1/2 whole wheat flour, egg sub, and applesauce instead of butter. I also used slightly less (brown) sugar. Halved the recipe, but used 2 whole bananas. You have to try it fresh from the oven!

White Chocolate and Cranberry Cookies

These are oh-my-goodness delicious! I used half whole wheat and half all purpose flour, light margarine, and Appleton rum because I did not have brandy on hand. I had no issues with spreading, but I rarely do when I use whole wheat flour.

Creamy Chocolate Frosting

It was my first time making my own frosting, and I don't think I'll ever go back to canned frosting again! I used light margarine and fat free evaporated milk, and it still turned out wonderfully. I used this frosting to pipe onto the ice cream cone cupcakes after some refrigeration. It set up beautifully! I experienced the same thing as other reviewers- it had a very strong powdered sugar taste right after mixing, but the ingredients blended well and it tasted very good after a few hours!

Favorite Banana Blueberry Quick Bread

Yum! I used 1/2 all purpose and 1/2 whole wheat flour, skipped the pecans, 1/2 canola oil and 1/2 applesauce in lieu of the shortening, egg substitute, and an extra small handful of blueberries. I also added some cinnamon and almond extract. Very moist and delicious!

Chocolate Banana Bread

Pretty good! I cut the recipe in half and used 1/2 canola oil and 1/2 applesauce in lieu of margarine, used egg substitute, subbed 1/2 of the flour with whole wheat, and used nonfat vanilla yogurt instead of the sour cream. I also used mini chocolate chips. It was a nice blend of banana and chocolate; neither flavor overpowered the other.

Sour Cream Waffles

I just got my first waffle maker and this was the recipe I decided to try. I used fat free sour cream, fat free vanilla yogurt, and egg beaters, as that is what I had on hand. Very good...the kids gobbled them up!

Taco Pizza
