Country Sunday Breakfast Casserole

I lightened it up by using turkey sausage, low fat sharp cheddar and mozzarella, and egg beaters. I didn't have green onions, so I cooked some white onions and garlic with the sausage. Topped with fresh rosemary and covered with foil the last half of baking. Everyone loved our breakfast for dinner! I will be making this one again!

Joe's Shamrock Shake

I made this for the kids and tasted it. It's been a long time since I've had a Shamrock shake, but it tastes pretty similar to what I remember. I topped the kids' with a dollop of Cool Whip and some mini chocolate chips. They loved it!

12-Hour Salad

Yum! It's very similar to my mom's 7 layer salad. I made this much healthier by using light mayo, fat free sour cream, fat free cheese, and turkey bacon. It got rave reviews from people who don't normally buy reduced fat items. I forgot to pick up the green peppers, but it still tasted fine.

Mocha Chocolate Chip Banana Muffins

Frozen Mudslide

You definitely know that this is an alcoholic beverage, but I think that it's well-balanced with the chocolate flavor. I used Cool Whip and an extra drizzle of chocolate syrup on top. I also used mint chocolate Bailey's and vanilla flavored vodka. Delicious!

Gluten Free Ginger-Honey Crunch

I used light margarine, ginger, all Rice Chex, slightly less than 1 C of coconut (thought about eliminating it altogether, but glad that I didn't), and 1/2 C each of dried cranberries and dried pineapple. Thinking about adding slightly less almonds the next time I make it. It has a very good Asian flavor. I made it for a road trip, and everyone that I shared it with loved it, too...it's one of my favorite recipes!

Chocolate Banana Bread

Pretty good! I cut the recipe in half and used 1/2 canola oil and 1/2 applesauce in lieu of margarine, used egg substitute, subbed 1/2 of the flour with whole wheat, and used nonfat vanilla yogurt instead of the sour cream. I also used mini chocolate chips. It was a nice blend of banana and chocolate; neither flavor overpowered the other.

Pumpkin Brownies

Incredibly rich and very, very good! I made them as the recipe is written, but I think next time I'll use less margarine and possibly swap some out for unsweetened applesauce.

Cottage Dill Bread

Delicious! I used a regular sized pkt of yeast, onion powder in place of minced onion (will definitely try it with minced onion next time), all purpose flour since I didn't have bread flour on hand, and some dill weed in addition to the dill seed. I did warm the cottage cheese and margarine in the microwave for about 45 seconds. The loaf rose beautifully!

Chocolate Chip Banana Muffins

Incredible! Easily my favorite muffin recipe, and I even made them healthier! I used 1C all purpose and 3/4 C whole wheat flour, applesauce instead of oil, and the Weight Watchers ff plain yogurt. I used mini chocolate chips and added a tsp of almond extract. Sooo good! The whole family loves them!

Sunday Morning Lemon Poppy Seed Pancakes

Seriously perfect. I looove lemon flavored anything, and these pancakes hit the spot! I doubled the recipe, used the juice of one whole lemon and the zest of 2 whole lemons. I tried them with powdered sugar, honey, and light syrup (each separately). You can't go wrong with any of them. Super recipe!

Garlic Quinoa

Delicious! I opted to roast a whole head of garlic and just add it to the quinoa/ chicken broth mixture instead of sauteing the garlic. The whole family loved it!

Summer Grilled Cabbage

I wrapped each individual wedge in aluminum foil and grilled. I also used nonfat butter flavored spread, making this fat free. I had no idea that cabbage could be that delicious!

Exactly what the other reviewers have said this is- a wonderful bread with a crispy, chewy crust. Wonderful with soup! I added 1 Tbsp dried, minced onion and 1 tsp garlic powder and it turned out very well!

Ice Cream Cone Treats

Very cute and a huge hit with kids. I made them twice, and each time the cones were soggy within hours. I even used applesauce instead of oil in the cake mixes thinking that may help- it did not. The recipe is definitely a keeper for kids' events, though. Topped with some piped on frosting, sprinkles, and a cherry, kids love them!

Rainbow Pasta Salad II

I used only 1/2 of a red onion and not quite an entire bottle of fat free Italian dressing. I also added some garlic, basil, and oregano to taste. It was good, but not quite out-of-this-world good. Easy to throw together for a potluck, though.
