Peanut Butter Chip Chocolate Cookies

I made these cookies for my husband and kids, who are huge peanut butter/chocolate fans. Usually I can take the combo or leave it. These, however, are AMAZING. The cookie is soft, almost brownie- like. The only change I made was to use margarine instead of butter. I find that it makes a chewier cookie. WONDERFUL recipe, and it will be used frequently, I'm sure!

Coconut Icebox Cookies

I was excited to make these cookies, but they turned out rather dry. I saved them by making a yummy lime glaze with powdered sugar, lime juice and zest. They did taste delicious and tropical that way, but I would not make and serve them without some sort of frosting or glaze.

Double Chocolate Cherry Muffins

I used Greek yogurt instead of sour cream, swapped vegetable oil for mostly unsweetened applesauce with a bit of coconut oil, egg sub, unsweetened vanilla almond milk for regular milk, swapped out 1C of the sugar for Splenda, and added an extra 1/2C of cherries. It made 24 regular muffins, which baked for about 18 min. Delicious and very moist!

Garlic Quinoa

Delicious! I opted to roast a whole head of garlic and just add it to the quinoa/ chicken broth mixture instead of sauteing the garlic. The whole family loved it!

Light Fruit and Nut Granola

My new go-to granola recipe! Super easy, no need to cook anything on the stovetop. I used ww flour, and swapped out the fruit and nuts called for for sliced almonds and blueberry craisins. Ready to make another batch today!

Banana Coconut Loaf

Sooooo good! I did not use cherries or nuts, but I did sprinkle some chocolate chips on top of a couple of my mini loaves. Yum! I also used coconut extract and sprinkled extra coconut on top of the loaves. I lightened it up by using a combo of no sugar added applesauce, Greek yogurt, and a tiny bit of canola oil instead of the fat, and used egg whites.

Country Sunday Breakfast Casserole

I lightened it up by using turkey sausage, low fat sharp cheddar and mozzarella, and egg beaters. I didn't have green onions, so I cooked some white onions and garlic with the sausage. Topped with fresh rosemary and covered with foil the last half of baking. Everyone loved our breakfast for dinner! I will be making this one again!

Cranberry Wheat Bread

I made this for Thanksgiving and everybody raved! I added a bit more cinnamon and nutmeg than called for. The result was a perfect, slightly dense and very moist loaf of bread...this recipe is a keeper!

Honey Mustard Dressing II

Chocolate Chip Cake Bars

I LOVE how flexible this recipe is. I omitted the nuts, used 1/2 chocolate chips and 1/2 butterscotch chips, and skipped the drizzle, opting to add extra chips during the last 5 minutes of baking time. I also subbed unsweetened applesauce for the butter that the recipe calls for. I imagine the possibilities for this recipe are endless: vanilla chips w/ funfetti, strawberry, lemon, or red velvet, peanut butter chips with chocolate. I can see myself using this recipe often. As an added bonus, it's done in no time flat!

Baked Oatmeal II

I read other reviews and decided to make a healthier version to take on a road trip for breakfast. It turned out beautifully! I used 1/2 C brown sugar, 3 tsp cinnamon, and added a tsp each of nutmeg and cardamom, skim milk, egg beaters, subbed unsweetened applesauce for the butter, and 1 finely chopped apple and about 1/2 C of raisins instead of the cranberries. Thinking of trying mango and coconut next. LOVE this recipe!!
