Trail Mix Cookies

Great starting recipe, but felt there was more to be done to make these healthier! Like other reviewers, I reduced the sugar- but mine went done to 1/4 cupe brown sugar, and 1/8 cup honey. I also increased the vanilla to 2 tsp, and salt to 1 tsp. Also used wheat flour instead of white. I love adding "extras" to my cookies, so I increased the walnuts and chocolate chips, and used raisins instead of dried cranberries. Definately a delicious alternative to regular cookies!

Salmon with Tomatoes

Delicious on its own, couple of changes to make it perfect. We only use cherry tomatoes that we slice in half- makes a huge flavor difference. For the best flavors, use the fresh ingredients including fresh lemon juice.

Curried Butternut Squash and Pear Soup

Has some good bones. I found the curry a little over-powering, and probably should have let my pears ripen a little more. As other people have said, you'll need to let your squash cook closer to an hour. Definately a keeper.

Ginger Veggie Stir-Fry

Great recipe! Followed exactly as listed, but could be better with some different veggies. 2nd time I made this, I used a red and green bell pepper, tofu, snow peas, onions and some mushrooms- and it was even better!

Spiced Sweet Roasted Red Pepper Hummus

Almost prefect! We used a little more red pepper than mentioned, and the flavor was wonderful! Brought to a family dinner and got lots of compliments and people who have never had hummus before LOVED it!
