Blue Cranberry Sauce
I used a little too much nutmeg, however, those that liked nutmeg at the table really enjoyed it. I liked it better the next day, and cold. Pretty easy to make!

Turkey Veggie Meatloaf Cups
I added cooked quinoa instead of couscous because that's what I had available. I also added some red pepper flakes for a little extra kick. Very easy to make!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing
Unfortunately the avocado and fruit goes bad within a day after cutting it up, so I had to buy more, but the tacos were great. I used canned pineapple for convenience and corn tortillas.
