I decided to make these for my 16 year old daughter who is both a vegetarian and has numerous food allergies. I know these would taste perfect if I had followed the receipe to a "T" but I had to change items to fit her diet. I omitted the egg and it turned out fine. There are some of us who have teenagers whose diets are lacking...my daughter falls into that category unfortunately. These are so tastey that I was able to add oat bran to the wet mixture along with oats and some mashed carrots (she will never taste them:). A fabulous muffin I will make for now on...thank you!
