Old-Fashioned Chocolate Fudge

maybe it's just me but this did not yield a lot of fudge at all. it wouldn't even cover the bottom of the pan. so maybe in the photographs people doubled or tripled the recipe? i'm also not sure how you would get sixty squares from this. it is good though.

Lemon Loaf

This was good but only after i made changes. The first time i tried it didn't rise very much so i was disappointed with that. also the "glaze" wasn't very good. i knew using regular sugar wouldn't be the best but if you're going to review a recipe you have to follow it the first time. also the baking time is wrong. mine was finished in thirty five minutes. the second time i added an extra egg and an extra half teaspoon of baking powder and it rose better and tasted better. i also used confectioners sugar instead of regular sugar and it was better. i also made it with splenda/stevia and it turned out very good. however with the sugar substitute i added an extra egg, a quarter cup of evaporated soy milk and one teaspoon of baking soda.

Blueberry Muffins I

I really liked these muffins, as did my parents. Some other people who tried them said they were good but not sweet enough. I think they're just used to store bought muffins that taste like cupcakes. I've also substituted the blueberries with chocolate chips, cranberries, and raisins and they wee still good. With the blueberries I add about a tablespoon of lemon zest and they're even better.

Aunt Anne's Coffee Cake

instead of following the recipe i made it in a mixer like other cakes i bake. it turned out great. i doubled the recipe though because i don't want a thin coffee cake. being doubled it rose to more than three inches. i also added cinnamon into the middle of the cake so it is more a cinnamon swirl coffee cake. anyway delicious. only thing i may change next time is adding a bit more soy milk so the batter is a little more like batter and not dough.

Chewy Cocoa Brownies

these were great. i used one cup of cocoa because i didn't want to leave 1/4 in the container and i think it was too much so next time i will stick to the recipe. they seem a bit floury though so maybe next time i'll cut it to just 1 cup. best brownies ever.
