Chocolate chip/toffee cookies

Best chocolate chip cookie recipe! I used 3 egg whites instead of 2 eggs and added 1/2 cup toffee bits. Cook 8-10 minutes. Cookies look puffy, but flatten upon taking out of oven - which makes them so great! Crisp on edges, but soft inside!

Shredded Beef Enchiladas

We liked this very much. I used a red enchilada sauce and baked them in the oven. They came out well. I had put all of the ingredients for the meat (chilies, meat, broth, etc) in the crock pot and just shredded the meat, refrigerated overnight and made the next day. Easy and good!

Easy Garlic Broiled Chicken

This was wonderful and so easy! Just be sure to constantly turn and baste the chicken so that it doesn't burn under the broiler!

Chocolate Chip Oatmeal Cookies

I love these best when they are raw! But they are great cooked too! These will be my "go to" recipe for Oatmeal Chocolate Chip cookies! They flatten out and are crispy on the edges with a little bit of chewiness! GREAT!

Zucchini Chocolate Cake

I don't know if something was wrong with my oven, but the cake had to cook for about 55 min. before it was done. The center jiggled at 35 minutes. I was disappointed because it wasn't as moist as others had experienced. I put some pieces in plastic ziplock baggies in the refrigerator and it helped with the moisture content, but I'm still not making this again.

Soft Whole Wheat Sugar Cookies

I use this recipe for cutout cookies. Refrigerate dough for about 1 hr. before rolling out. I use pumpkin pie spice and make autumn leaf cutout cookies and let the kids decorate them. I do not put the extra cinnamon and sugar on them as they will have enough sugar with the frosting and sprinkles :)

Flatlander Chili

I have younger kids, so I used 2 Tbsp. only of chili pwdr., and used 29 oz. Tom. sauce, 15 oz. tomatoes in juice, red kidney beans and black beans and put this in the crockpot. I then made cornbread to go with it. YUMMY!

Easiest, Most Delicious Meringue Buttercream

I can't believe how good this is! While my egg white/sugar mixture never seemed to increase in volume to any degree (perhaps because I used raw sugar?), it still came out wonderful. It is not too sweet and is very smooth. Because of the egg whites, however it might be advisable to refrigerate this after icing the cake. I used this for my son's dragon cake for his 11th birthday.

Delightful Apple Spice Muffins

A quick easy muffin. Few changes: Used all butter, all brown sugar, did half whole wheat and half all purpose flour, added 1/4 tsp. vanilla and 1 small finely chopped apple, raisens and 1 Tbsp. Wheat Germ. This made 18 medium size muffins. It's a keeper

Bacon Mushroom Chicken

This is a keeper! Don't have to mess with cooking the bacon first - a plus in my book! Suggest put in upper 1/3rd of oven for the last 30 minutes to help cook the bacon more. Most people seem to not like their bacon limp. This would be great for valentine's dinner as it's taste rivals anything a restaurant puts out!!! My kids (5 yr., twins 22 mo. loved it!)

Basil Tomato Pork Chops

Easy to fix. Since I didn't want to add any thickener to it, I would suggest using a 14-1/2 oz. can diced tomatoes (without added sugar) to keep it no-carb. I added about 1/2 c. garlic/onion pasta sauce too. Tasted good.
