Homemade Black Bean Veggie Burgers

These were quite tasty. I am not a big fan of onions or peppers, but I'm trying to eat better, so I used onions and peppers anyway. I doubled the recipe and used a whole orange bell pepper and a whole small white onion. Because my husband isn't a big fan of onions or peppers either, I put them in my food processer and kept going until they were really finely chopped and they added a nice flavor without having large chunks. I used dried beans I had cooked in a slow cooker, so I didn't have a lot of extra liquid. I froze the patties for about an hour before pan frying one, and baking the others. Both ways turned out great. I also made homemade burger buns for these, and THEY WERE AMAZING. I used the "Burger or Hot Dog Buns" recipe from here, and they took these to a whole new level. Overall, it was a good recipe, though I did end up using 1.5 times the bread crumbs like other reviewers have reported. I will likely try these again with cooked brown rice or quinoa in place of the bread crumbs to improve the nutrition.

Burger or Hot Dog Buns

These are AMAZING!! My entire family, including 2 children under the age of 5 LOVED these. They were fantastic just by themselves as well as with the black bean veggie burgers I made (also from this site). I am a pretty experienced baker, but I am a novice bread maker. I used my bread machine's dough setting. My dough ended up being kind of sticky, but I added some flour to keep it from sticking to my hands and I was able to shape them decently. This must be a very forgiving recipe as they looked quite nice when they came out of the oven. There is a video tutorial on these, which I watched after making mine, and they show the butter as being melted. Mine was just softened butter, but they still turned out beautifully! This is definitely a keeper!

Banana Pudding IV

Fantastic! I made this for my stepfather and he said it was THE BEST banana pudding he has ever had! I followed the directions exactly except I did not spread the whipped topping on top - I used a little for garnish, but that's all. Everything tasted great the 2nd day too. I would recommend you make sure to use a hand mixer, not a stand mixer--I started out with a stand mixer and I don't think everything would have been incorporated well enough if I continued with the stand mixer. Make this pudding! I don't even really like bananas and I thought this was great!
