Brazilian Cheese Bread (Pao de Queijo)

This recipe was awesome! When I told my husband (who introduced me to Pao de Queijo) that someone had complained that it was chewy, he said, "that's the way it supposed to be!" I made it exactly like the recipe (used the butter instead of olive oil) for our Easter Dinner and he could not stop oohing and ahing about them. The only complaint he had was that they were TOO big! He said that the ones he's had have been about a 1/3 of that size. He thought that a 2" scooper would have been the perfect size. I will make these again and again! Quick Tip: Want to make sure that this sticky batter comes out of your scooper with ease? Spray the inside of the scoop with Pam and they'll just slide right out in nice round balls!

Shelby's Microwave Meat Loaf

So I think I was like everyone else, because I was skeptical that this was going to turn out. However, even my picky husband thought that this was amazing meatloaf! I made it almost the same, except I used ground venison instead of beef. Couldn't tell the difference. The one thing that was missing was a little crust, because normally when I make it in the oven, I do a freeform loaf to get the "brown" on the outside. However, the convenience factor MORE than made up for it! Great recipe!

Spaghetti Carbonara

My husband and I just made this recipe and he wanted to eat the whole pan on his own! I did use a little pasta water to loosen things up, but other than that, I did the recipe exactly as stated. As everyone says, pepper is essential in this! This will become a regular in our household!

Bacon Cheese Frittata

I made this last night for dinner as something to clean out my fridge. I did make a couple swaps...cooked, cubed ham for the bacon, no green onions - so I used fresh parsley and some onion and garlic powders. My husband doesn't like cheese so I only used 1/4 cup of cheddar and about 1/4 cup of shredded hot pepper jack cheese. The possibilities are endless with this recipe! Also cooked in an 8 x 8 pan, but had to up the temp to 400 and cook for about 35-45 minutes. Great recipe and I will be making this more often!
