Greek Style Potatoes

Love these. I did substitute chicken broth for the water/bouillon cubes, and used 1 cup. I also used a greek seasoning. I hate to review a recipe when I altered it, but I think I stayed pretty close. I will definately make again.

Baked Salmon Fillets Dijon

I just made this for my husband, and he loves it. I had some lemon dill dijon mustard, and used that. (never knew what to do with it til now) and only had unseasoned breadcrumbs. I am not a fish eater myself, but this was definately an easy easy recipe and one I will keep.

Angel Chicken Pasta

This is very good. It is rare that I find a recipe that everyone in my family likes. I did have to tell my husband not to salt it (he just shakes salt on everything and tastes it after) It is a touch on the salty side. Very rich, and very easy to make. My extremely picky 8 year old said this deserves more than 5 stars. Im giving it five stars based on the fact that everyone was happy and we have no leftovers. Its not my perfect dish, but I will definately make it again.

Chicken Valdostano

we really liked this a lot, and will definately make it again. I did make a few tiny changes. I added a little olive oil to the butter when cooking the chicken to keep the butter from burning. After browning the chicken, I put it in a pan in the oven at 350 for awhile because I didnt feel 2 mins a side was enough and I was prepping the sauce, etc. I had pancetta and no prosciutto, so I cooked that up and crumbled it on top of the cheese, and cooked the mushrooms a little while longer until almost all the liquid was gone. (the mushrooms were awesome!) This is a salty dish, I had to catch my husband before he just did his usual shake of salt without tasting. My kids loved it, without the mushrooms. Authentic Enchiladas Verdes

These are awesome. The green sauce is really really good. I was in Buffalo NY and couldnt get serrano's so I substituted Jalapenos and added a bit extra. I also rolled them a whole pan at a time and topped with Monterey Jack cheese instead, then served with a little choppped onion and cilantro and sour cream. Everyone loved them! Thanks for the recipe, I will definately be using it again and again.

Glazed Corned Beef with Lentils

This is soooo good. I have been making a difference glazed corned beef for years now, and I had bought several corned beefs when they were on sale on St Patricks day. We like our other recipe so much that I never make a different one. I am so glad I decided to finally try something new. Definately make the lentils, they are delicious with the meat. I lined my baking pan with foil, and used the chili sauce in the lentils. I never would have thought the two would pair so well together. Definately a keeper.

Frijoles I

Yum! These are the best beans ever. I made a double batch and they were instantly gone. I want more right now as a matter of fact. I put in a little more garlic and usually simmer a jalapeno or two with the beans. Thank you for the recipe!

Lemon Cream Pasta with Chicken

This is sooo good. Rarely do I find something that we all like, but this was good for both my husband and myself and both the kids. This was like something I would order at a restaurant. It didnt look so fantastic, because it was all white.. but this is great.

Bow Ties with Sausage, Tomatoes and Cream

I tried Lemon cream pasta with chicken (from this site) last week and we loved it so much I looked for similar recipes and found this one. I love the cream in the sauce. We all liked this, I probably would have given it a 4 and a half but my husband said it was a six so I compromised. Very different and good, will make again.

Zesty Porcupine Meatballs

This is getting 5 stars from me because everyone in our house ate it and liked it, which is really rare. Its easy, economical, and tastes good. I had to leave out the onion because of the kids, and I put in a little onion powder for flavor. The worcestershire sauce really adds something to this. Definately not gourmet food, but great for families.

Pastitsio III

My husband and I loved this! I have made many pastitsio recipes before, but this one is my favorite. I loved the taste of the fresh tomatoes in it. At first I was leary about even trying this recipe. First because I thought it was going to be a hassle to peel and seed the tomatoes, but that was easy. Secondly because of the chili powder. I just thought how greek does that sound? But I made it exactly per the recipe and am so glad I did. seriously, this is good. Thank you!

Spaghetti Salad III

I love this recipe, and make it often. I use green onions and make my ranch dressing from the envelope of Hidden Valley Ranch which tastes better than the bottled version in my opinion. Excellent salad.

Baked Salmon II

This was very good, and so easy to make. This is the first time I have ever cooked salmon. My husband loved it, and I discovered that salmon is probably an acquired taste. I am giving it 5 stars because I think I was just picky. Husband loved it and ate two large pieces, and my 4 year old son liked it.

Five stars from my husband. He said it was the best dip he has ever had. I thought it was really good too, though probably a 4 for me, since I liked the one at the restaurants I have tried just a little better. Very rich.
