Grilled Asparagus

Reviewed: May 26, 2004
This is so great, we are big asparagus fans and this is one of our favorite ways to eat it. I just learned a little trick in a magazine and it works fantastic for this recipe. Soak some wooden skewers in water and then skewer together 6 or 7 stalks of asparagus all in a row like a little fence, using two skewers, one at the top one at the bottom. They wont fall through the grate on the grill that way and they are easy to flip.

Waldorf Salad II

Reviewed: Sep. 8, 2004
This is a perfect traditional waldorf salad recipe. Very good on its own, but I was trying to recreate a salad they have at a deli near my house "tropical waldorf salad" so I started with this as a base and added mandarin oranges, a little pineapple, cranberries and some coconut and it came out perfect. Great either way! Thanks

Oven Barbecued Beef Brisket I

Reviewed: May 2, 2003
I messed this recipe up and it still came out wonderful! The only brisket I could find was a tiny little 2 pounder, and I misread the directions and cooked it an hour a lb and then sliced it, put on sauce, and cooked it another hour. But even with the additional cooking time it came out unbelievably tender and full of flavor. I did put some liquid smoke on the meat along with garlic salt and pepper. It was great, and we will definately make again.

Candied Chicken Breasts

Reviewed: Mar. 14, 2003
I was really not into making this. It just didnt appeal to me really. But, I was looking for something the kids would like and I had all the ingredients on hand. This was a huge hit at my house! After a week of nearly having to force my 8 year old to eat dinner.. I was thrilled to see him eat every single bite on his plate. I served it with white rice. The breading was soggy, and I dont know how to get around that. I thought about leaving it off the next time, but it really does have nice flavor. Even if it was soggy, it tasted good. It is a bit on the sweet side, but in a good way. Will be keeping this one. I would be giving it five stars, if it wasnt for the soggy breading. Which didnt bother anyone but me.***after making this for several months as a regular around here, I can highly recommend not covering the dish. It comes out much less soggy, and the sauce thickens up***

Artichoke Bruschetta

Reviewed: Apr. 8, 2002
This was very good. Next time I make it I think I will add a little fresh garlic. Definately toast the bread before topping with the artichoke mixture. I tried it both ways.

Pasta with Tomato Cream Sauce

Reviewed: Jun. 19, 2007
Yum. I could eat this sauce with a spoon. Very delicious. I used heavy whipping cream since that is what I had, and then tossed it with 24 ozs cooked spaghetti. Think next time I will use less spaghetti so that it is saucier. I wanted to dip my bread in this. Will definately make again!

Caldo De Res (Beef Soup)

Reviewed: Sep. 14, 2005
I love this soup. It is soo good. My favorite mexican restaurant serves a caldo de res that I love, and I have been looking for a recipe to duplicate it at home and this is very close. I add slices of corn on the cob and large chunks of zucchini to make it like theirs and serve it with fresh lime, mexican rice (put a few spoonfuls of rice and salsa in your soup! awesome) Great recipe! Thank you!

Pat's Mushroom Saute

Reviewed: Nov. 2, 2003
These are sooo good. I was definately apprehensive about the vinegar, but curiousity got the best of me and they are awesome. I have made them twice, the first time with balsamic, and the second time I was out so I tried rice wine vinegar, and believe me.. balsamic makes all the difference.

Unreal. This is fantastic. I wasnt too sure about this when I was reading the ingredients, but my husband loves anything with chilies and cheese. Not only is it great, but its so easy. Will make again and again. McCormicks makes a great greek seasoning.

Spaghetti Salad III

Reviewed: Mar. 8, 2003
I love this recipe, and make it often. I use green onions and make my ranch dressing from the envelope of Hidden Valley Ranch which tastes better than the bottled version in my opinion. Excellent salad.

This was very good. Everyone enjoyed the taste, and liked it much better than the typical coleslaw. I also thought it was pretty, which was a plus. Very easy to make.

Angel Hair Pasta Salad

This is especially good when made with ranch dressing made from the packet, it just seems to have more flavor that way. I added celery to it.

Awesome and Easy Creamy Corn Casserole

Reviewed: Mar. 21, 2003
I have made this several times now, its definately a family favorite. I LOVE this. The second time I made it, I was out of sour cream and didnt know it so I substituted with mayonnaise and it turned out delicious. My family prefers the mayo version, which is slightly sweeter and my Mom and Dad make the sour cream version which is a little tangy. Both ways are sooo good. Highly recommend this one.

Chicken Valdostano

Reviewed: Jan. 27, 2005
we really liked this a lot, and will definately make it again. I did make a few tiny changes. I added a little olive oil to the butter when cooking the chicken to keep the butter from burning. After browning the chicken, I put it in a pan in the oven at 350 for awhile because I didnt feel 2 mins a side was enough and I was prepping the sauce, etc. I had pancetta and no prosciutto, so I cooked that up and crumbled it on top of the cheese, and cooked the mushrooms a little while longer until almost all the liquid was gone. (the mushrooms were awesome!) This is a salty dish, I had to catch my husband before he just did his usual shake of salt without tasting. My kids loved it, without the mushrooms. Thanks for the recipe!

Pastitsio III

Reviewed: Jul. 26, 2005
My husband and I loved this! I have made many pastitsio recipes before, but this one is my favorite. I loved the taste of the fresh tomatoes in it. At first I was leary about even trying this recipe. First because I thought it was going to be a hassle to peel and seed the tomatoes, but that was easy. Secondly because of the chili powder. I just thought how greek does that sound? But I made it exactly per the recipe and am so glad I did. seriously, this is good. Thank you!

Berry Shooters

Reviewed: Dec. 3, 2004
Whoa... These things are toxic. The vodka was just too overwhelming. Maybe its because I put them in those little condiment cups with lids. You were hit with the smell of vodka when you opened them up. People drank them, and we had a great time (took them on a bus trip to Stateline) but I wish they had tasted better. Someone told me that flavored Schnapps works much better than vodka, and I am going to try that next time. Great idea though. Thanks! *****update**** I tried making jello shooters again, this time I used one small package of jello, dissolved it with 3/4 boiling water, let it cool a bit and then added 3/4 cup of schnapps (Raspberry Pucker flavor) They were fantastic!

Sleepy Hollow Chicken Salad Supreme

Reviewed: Apr. 10, 2006
This is very good. I liked it a lot. I didnt have pecans, so I put slivered almonds in it and mixed them and the grapes right in. Next time I might try some tart apples instead of the grapes, and am wondering what a little red onion would taste like in this. I will probably make again. Definately a sweet chicken salad. I am editing this review just a little bit, after eating it again the second day I think this is just a little bit too fruity for me.

Easy Yummy Chinese Chicken Salad

Reviewed: Sep. 18, 2005
I was not crazy about this recipe. The dressing is on the bland and oily side and it needs some tweaking. I tried adding a little sugar to it but it didnt work. I will try another recipe.
