Tiger Butter III

Reviewed: Feb. 28, 2002
I made this for my sons cubscout banquet. It was extremely easy to make, and my son and husband loved it. It looked very nice. I do recommend using wax paper. And cut into small pieces, as it is extremely sweet.

Pastachutta

Reviewed: Mar. 7, 2002
This incredibly easy recipe is delicious. It is deceptive, because of the short list of ingredients. Really good. My toddler liked it, but my seven year old didnt. I didnt expect him to, because of the dreaded mushrooms and onions. But everyone else loved it. I will definately be making this regularly.

Bud's Potato Salad

Reviewed: Mar. 15, 2002
My husband liked this quite a bit, it was too sweet for me though. I guess I prefer a more traditional potato salad taste, with more crunch. This was sweet along the lines of deli potato salad. My husband did like it enough though, that he would want it again.

Baked Seafood Au Gratin

Reviewed: Apr. 8, 2002
The adults in my family liked this. It was good, though the sauce did seem to overpower the delicate taste of the seafood. I personally wasnt wild about seafood and cheese together, but rated it per what the rest of the family thought.

Artichoke Bruschetta

Reviewed: Apr. 8, 2002
This was very good. Next time I make it I think I will add a little fresh garlic. Definately toast the bread before topping with the artichoke mixture. I tried it both ways.

Chocolate Peanut Butter Pie I

Reviewed: Mar. 8, 2003
My husband liked this pie. It is very rich, but very good. My only problem with it, was that the peanut butter filling was not easily swirled into the chocolate and I ended up with some pretty big clumps.

Spaghetti Salad III

Reviewed: Mar. 8, 2003
I love this recipe, and make it often. I use green onions and make my ranch dressing from the envelope of Hidden Valley Ranch which tastes better than the bottled version in my opinion. Excellent salad.

Apple Dip

Yum. This stuff is amazingly good. Totally addictive. Both of my kids loved it. My husband doesnt really like apples, so I had to make him try some. He ended up eating the most of it.

Candied Chicken Breasts

Reviewed: Mar. 14, 2003
I was really not into making this. It just didnt appeal to me really. But, I was looking for something the kids would like and I had all the ingredients on hand. This was a huge hit at my house! After a week of nearly having to force my 8 year old to eat dinner.. I was thrilled to see him eat every single bite on his plate. I served it with white rice. The breading was soggy, and I dont know how to get around that. I thought about leaving it off the next time, but it really does have nice flavor. Even if it was soggy, it tasted good. It is a bit on the sweet side, but in a good way. Will be keeping this one. I would be giving it five stars, if it wasnt for the soggy breading. Which didnt bother anyone but me.***after making this for several months as a regular around here, I can highly recommend not covering the dish. It comes out much less soggy, and the sauce thickens up***

Cauliflower Shrimp Salad

Reviewed: Mar. 16, 2003
I wasnt real crazy about this. I did change the recipe a little however. The olives didnt appeal to me, so I left those out. I also added a small amount of chopped celery and some frozen green peas. It wasnt bad, and my Mother liked it quite a bit and ended up taking the majority of the bowl home. A little bland.

Awesome and Easy Creamy Corn Casserole

Reviewed: Mar. 21, 2003
I have made this several times now, its definately a family favorite. I LOVE this. The second time I made it, I was out of sour cream and didnt know it so I substituted with mayonnaise and it turned out delicious. My family prefers the mayo version, which is slightly sweeter and my Mom and Dad make the sour cream version which is a little tangy. Both ways are sooo good. Highly recommend this one.

Brown Sugar Meatloaf

Reviewed: Mar. 24, 2003
This was ok, and my Husband and (meatloaf hating) kids liked it. Which is a plus in my book. For that reason alone I will probably make it again. I like to try the recipes exactly as posted the first time I make them, but I do wish I had put some of the brown sugar and ketchup on top as some of the other reviews mentioned. Good basic meatloaf with no bells or whistles.

Best Spinach Dip Ever

Reviewed: Mar. 24, 2003
This is very good. I usually used spinach soup, but will definately be using the leek soup from now on. It adds a lot of flavor.
