Amish Meatloaf

This is a very good meatloaf. It is on the sweet side, but in a good way and we like that. I like the tang of the sauce, much better than just plain catsup.

Pork Chop and Potato Casserole

I did alter this a bit, to suit the ingredients I had on hand. I had made a pork roast this weekend (kalua pork from this webpage) and had lots of leftovers, so instead of pork chops I used shredded leftover roast, and had to leave the onions out since my kids dont like them. It turned out good, nothing fancy and sometimes that is exactly what you want. Kids and husband all ate it happily, and it was inexpensive and easy to make with items on hand. Thank you.

Kalua Pork

This turned out good. Juicy and with a slight smoky flavor. The salt turned into a little crust that I tapped off and discarded before shredding, so it didnt turn out to be overly salty. The leftovers made great barbecue pork sandwiches the next day. Thank You!

Cuban Midnight Sandwich

Yum yum yum. We loved these. I made them on my griddle, and just poured some olive oil on it, and pressed a plate on the sandwiches while they grilled. The bread came out nice and crusty, and the smooshing seems to make the sandwiches stay together nice. They look great, and my husband is still having a fit over how much he likes them. My picky son even liked it, minus the pickle.

Zucchini Pancakes

I had all the ingredients on hand and a craving for zucchini pancakes so I tried this recipe out. Very different from what I was craving, but they are good. My husband loves them, what I was looking for was a less pancake, more zucchini type patty, which is what we are both used to. He said he prefers this version however. Very fluffy, delicate taste, and not heavy. I will make this again since he liked it so much. Kids would not touch.

Cracker Candy

This was a hit with everyone who tried it, I like the taste of the salty cracker with the sweet toffee and chocolate. I did have trouble getting mine off the cookie sheet without leaving a lot of the cracker layer behind.

Chocolate Covered Cherries

I really really really wanted to love these. I was excited about making my Mother chocolate covered cherries for part of her Christmas present, they are her favorite. Perhaps I can try these again and tweak them a bit, I think perhaps if I got less fondant on the cherries they would turn out better. I have had mine sitting for two weeks and they are nice and gooey in the very center only, it was just hard to get less fondant on the cherries. And it took a LOT more chocolate to coat than the recipe calls for, I might try again. They turned out very pretty.

Everyone in the family liked this dinner, which makes it a definate do again in my book. The only thing I did differently was that I left the mushrooms out of the finished dish, and served them only on my husband and my chicken, as the kids dont like them.

El Dorado Beef Casserole

Hmm.. I hate to give bad reviews, but I just did not like this. The looks of it I could get past, but something about the texture just really turned me off. The kids wouldnt touch it, but my husband liked it. I swear, he likes anything that I dont though. LOL Little bland, and I wish I could put a term to the texture, but I cant.

Awesome Slow Cooker Pot Roast

This is very good, it comes out moist and tender unlike quite a few pot roast recipes I have tried. I also liked the flavor of the gravy. Very happy with this recipe, thank you!

Sophie's Zucchini Bread

This is absolutely wonderful. I would not change a single thing. It comes out dense, with just the right sweetness, with a nice crust on it. I really like this bread, and cant see a reason to ever use another recipe for zucchini bread again! Thank you! (I had to leave it in about 5 to 7 minutes longer til it was completely cooked)

Creamed Cabbage

My husband loves cabbage, so I decided to try something different. This will be a keeper, he loved it. I used parmesan instead of romano, because I had all the other ingredients on hand. Kids wouldnt touch it, but I really didnt expect them to.

Pat's Mushroom Saute

These are sooo good. I was definately apprehensive about the vinegar, but curiousity got the best of me and they are awesome. I have made them twice, the first time with balsamic, and the second time I was out so I tried rice wine vinegar, and believe me.. balsamic makes all the difference.

Chile Verde II

This is really good. I scaled the recipe in half, and instead of using the 9 cups of broth called for I used about 6. I also let it simmer for a very long time, probably 8 hours or so. The longer it cooked the thicker it got, and the meat just melted in your mouth. I couldnt get poblano chilis the day I went to the store, and I substituted pasilla chilis. I made burritos out of it. I am giving it a 4, because my husband wasnt crazy about it, but he isnt a huge fan of Mexican food.

Connie's Zucchini "Crab" Cakes

Yum! Definately a new favorite for me. I dont know if I would say it tastes like crab, but they are really really good. My husband loved them too. Very easy to make, the only work involved is grating the zucchini. I did squeeze out as much moisture from the zucchini first, and mine came out nice and golden. Thank you!
