Buckeyes II

Reviewed: Jan. 4, 2006
This was my second time making buckeyes, and I think I prefer this recipe with the graham cracker crumbs in them. They seemed to hold their shape a bit better. I did have to put them in the freezer prior to dipping. Not sure I am entirely crazy about buckeyes, but if you like them then this is a good recipe for them. Very rich, make small balls.

Sour Cream Refrigerator Mashed Potatoes

Reviewed: Jan. 4, 2006
These are great. The only change I make is adding a whole head of roasted garlic. Everyone in the family loves these, and I am not even a mashed potato fan.

Janine's Best Banana Bread

Reviewed: Jan. 4, 2006
This is good bread. I added walnuts and a little vanilla to it. I just ate a piece still warm out of the oven, and I think it might need to be a little bit more moist, so I might tweak it a bit next time.

Very Berry Pork Chops

Reviewed: Nov. 28, 2005
This is good. I liked the fact that it wasnt overly sweet. It was a nice light glaze, and it complimented the pork chops very nicely. Its very easy to make, and from ingredients usually on hand which is a huge plus! Will make again. Not super wow, but definately nice.

Cranberry Chutney I

Reviewed: Nov. 28, 2005
This is very good. I was a little worried about it, with the vinegar and cranberries I thought it might be too tart. But I liked it a lot.

Butternut Squash Casserole

Reviewed: Nov. 28, 2005
I made this for Thanksgiving and I thought it was pretty good, Actually, I cant wait to make it again with two slight changes. First, a little less sugar in it and secondly I might just do away with the whole topping all together or at least use very little of it. I really liked the taste of it though! Just found it too sweet as is.

Corn Chowder IV

Reviewed: Nov. 9, 2005
This soup is great. It was quick, easy, relatively inexpensive, and I usually have the ingredients on hand other than the cheese. Everyone in my family enjoyed this. Thank you for the recipe.

Mama's Italian Wedding Soup

Reviewed: Oct. 5, 2005
This was a big hit at my house. And I wasnt so sure it was going to be. We never eat soup for dinner for some reason. I left out the basil because I didnt have any, and I left out the onion because of picky children, but I added a bit of onion salt to the meatballs. My husband was worried about "simmered" meatballs. He has this thing about crispy meat. But everyone loved it. I thought it had a lot of flavor and it was incredibly easy to make. I started the broth and dropped the meatballs in while i cut the veggies and just dropped in the spinach at the last minute. We put grated parmesan on top and ate it with french bread. Thanks for the recipe!

Favorite Peanut Butter Cookies

Reviewed: Sep. 27, 2005
These are not very sweet. I also wish that I had used butter instead of margarine, but I was out of butter which is why I picked this recipe. Not very flavorful. Not a bad cookie, they are edible, but I will be looking for another recipe.

Easy Yummy Chinese Chicken Salad

Reviewed: Sep. 18, 2005
I was not crazy about this recipe. The dressing is on the bland and oily side and it needs some tweaking. I tried adding a little sugar to it but it didnt work. I will try another recipe.

Tuna Noodle Casserole II

Reviewed: Sep. 17, 2005
This was good. We ate it, and surprisingly enough my super picky 11 year old had two servings. But I have had tuna casseroles that I liked better. I used cheddar cheese, and put in some peas and carrots.

Caldo De Res (Beef Soup)

Reviewed: Sep. 14, 2005
I love this soup. It is soo good. My favorite mexican restaurant serves a caldo de res that I love, and I have been looking for a recipe to duplicate it at home and this is very close. I add slices of corn on the cob and large chunks of zucchini to make it like theirs and serve it with fresh lime, mexican rice (put a few spoonfuls of rice and salsa in your soup! awesome) Great recipe! Thank you!

Angela's Easy Breaded Chicken

Reviewed: Aug. 31, 2005
I was in a pinch and didnt really have anything to make for dinner and no time for the store so I tried this out. It was moist, which was really good. But other than that, nothing spectacular. If I ever make this again I think I would definately leave it in the dressing to marinade awhile and maybe try a little parmesan cheese in the bread crumbs. It was super easy and the ingredients are things I always have on hand, definate bonuses.

Beef Pot Roast

Reviewed: Aug. 13, 2005
I am not a huge fan of pot roast. But my husband and children like it, so i keep trying. This one has a very nice flavor. Mine still turned out tough, although it definately wasnt dry. I really liked the flavor of this, but am still looking for a melt in your mouth tender pot roast recipe.

Pastitsio III

Reviewed: Jul. 26, 2005
My husband and I loved this! I have made many pastitsio recipes before, but this one is my favorite. I loved the taste of the fresh tomatoes in it. At first I was leary about even trying this recipe. First because I thought it was going to be a hassle to peel and seed the tomatoes, but that was easy. Secondly because of the chili powder. I just thought how greek does that sound? But I made it exactly per the recipe and am so glad I did. seriously, this is good. Thank you!

Zesty Porcupine Meatballs

Reviewed: Jul. 14, 2005
This is getting 5 stars from me because everyone in our house ate it and liked it, which is really rare. Its easy, economical, and tastes good. I had to leave out the onion because of the kids, and I put in a little onion powder for flavor. The worcestershire sauce really adds something to this. Definately not gourmet food, but great for families.

Crispy Herb Baked Chicken

Reviewed: Jul. 11, 2005
I followed the recipe exactly and think I would fiddle with it next time. Its a good base recipe, but definately needs some more flavors. As it is, there are no herbs in it at all. Next time I would add some italian seasoning and try that. It did come out with a nicely textured coating.

Extreme Banana Nut Bread 'EBNB'

Reviewed: Jul. 10, 2005
This was good bread, but not what I am still looking for. It came out very dark, and I wish it was a little moister with more banana flavor. I will keep looking. All in all its a good bread, we enjoyed it but it didnt live up to its hype.

Buffalo Chicken Dip

Reviewed: Jun. 24, 2005
This was ok. I dont think I will be making it again though. I used some leftover chicken breasts, I dont like the taste or texture of canned chicken and I also substituted blue cheese dressing for the ranch and left out the cheddar cheese. So my review may not be entirely fair, because I did alter it.
