Spring Strawberry Spinach Salad

I made this and it was great. Very simple to make and goes with just about any type of food. I also tried it with apricots once, and once with peaches (replacing the strawberries) and it tasted just as (if not more) delicious.

Chocolate Covered Strawberries

I did use the coffee hto plate method suggested, and it took a great deal of time to melt, though it did not scorch. I woudl suggest that if using the coffee hot plate method, add a little chocolate at a time, and not the entire amoutn at once. This gives the chocolate a chance to heat up and melt down a lot quicker. It saves a lot of time. I also tried making strawberries, bananas, and grapes on skwers and then dipping them in chocote. I froze them for a few hours,a dn the kids loved it.

Seared Scallops with Spicy Papaya Sauce

I mixed this with chilean sea bass cut into small chunks. Everyone loved it. I can't believe how simple this was and how amazing it tasted.

Couscous with Dried Cherries

Abstinence on the Beach

I tired this and evryone like dit. A bit on the "zingy" side. I would suggest adding a lot more coconut milk to make it milder. Also, try making cranberry juice ice cubes to go along with it.
