I am torn between our pescitarian (fish only) diet and wanting to cook absolutely everything that Paula Deen makes. I miss bacon.

All holiday cooking and trying to recreate things that my husband's mother made for him.
My cooking triumphs
I used to make a mean meatloaf back when I ate meat. Now, I do a great Tilapia Francese and yummy sauteed brussel sprouts with shallots. With the addition of my new "Perfect Brownie" pan, I've been having many triumphs in bar form.
My cooking tragedies
Almost anytime I try to make tofu it turns out horribly. I've decided tofu is something best left to an Asian restaurant.

Frosted Banana Bars
These were delicious. I made a few modifications. I used a cup of vanilla flavored greek yogurt instead of sour cream. I also added an extra 1/2 teaspoon of vanilla and a 1/2 teaspoon of almond extract. I added 1 cup of walnuts when I put in the bananas. I didn't have a 10x15 pan and used a 9x13 instead. It took an extra 10 minutes to bake but they turned out with a brownie type of consistency that was really good. Instead of frosting, I whipped some heavy cream and mixed in some cinnamon sugar and just served with a dollop on top. Next time I make this, I will probably add one more banana.
