German Pancakes II

I had this just once before when a friend made it for breakfast - loved it. So I was happy to see this recipe. I made it exactly as written since I had no experience making it. It puffed up nicely and looked great, however it was a good thing I read the reviews first. Some wrote that the cooking time should be 20 minutes, I baked it for 30 minutes and that was too long. The bottom was rather dry and stuck to my pan. Other than that, both my husband and I enjoyed it. Will make again, with a few changes of course. Also, the recipe asks for a "medium" baking pan - I was going to use an 8x8 pan but again, a reviewer suggested 9x13 - thank you so much for that, it would not have turned out at all.

German Spaetzle Dumplings

I have made spaetzle for years and this recipe is very close to what I have been doing except I agree with those who feel 1/2 tsp nutmeg is too much. Just a small pinch will do. I have always hated cleaning the spaetzle maker or using a strainer so I do what my Mom did - scoop the dough onto a small cutting board (I prefer plastic) and with a knife cut off thin "slices" into the boiling water or broth. Be sure to spray the board and knife with non stick spray for an easier cleanup. The dumplings will be a little bigger, but just as tasty.

Cinnamon Rolls II

I made these, put them in the fridge overnight and baked in the morning. Used my mixer with dough hooks to prepare the dough. It was lovely to work with, however once baked I foun them to a disappointment - they had an odd texture, not like anything I've ever made or had before. Also 2 cups of brown sugar is too much. I had about 1/2 cup left over and still found it to be too much sugar. Probably won't make them again..

Potato Salad Soup

Made this today, it turned out quite well. I do not care for thyme or poultry seasoning and used dill weed instead. I added 1/2 of a small jalapeno, finely diced, to give it just a tiny bit of a kick. My husband gives it 3 1/2 stars, he doesn't gush over food like I do. I would make this again, but probably would use bacon instead of ham.

Chicken Enchiladas with Creamy Green Chile Sauce

I made this for my sister's family & friends who are not familiar with Mexican dishes. It was a great hit, everyone loved it!! My brother in law was looking for the leftovers the next day . Can't say I'd do anything to change it since it was so good. Made for just my husband and myself - it was no problem to reduce the recipe to suit the two of us.

Blueberry Oat Bars

While we liked that the bars were easy to pick up and eat, my husband and I found both the base and filling to be lacking in flavor. I suggest using brown sugar rather than white in the crust as well as some vanilla. Since we pick our own wild blueberries, I was disappointed by the blandness of the filling and felt I had wasted them somewhat. I would use regular oats rather than quick oats, find them rather "dusty".

Kalacs (Hungarian Cinnamon Swirl Bread)

I have never had the knack for kneading dough, so my breadmaker saves me! I use it to mix, knead and raise the dough then remove it to pans to bake in the oven. I used quick rising yeast - this recipe turned out beautifully, it was very light and fluffy, just sweet enough. I'm looking forward to making again and trying out some of the variations suggested. Excellent!
