Creamy Peanut Butter Fudge

Reviewed: Oct. 11, 2005
Terrific fudge! I followed somone elses advice on using a candy thermometer and cooking to the soft ball stage. I had set my timer after it got to a roiling boil. At 7 minutes I was not near the soft ball stage. They also said to cool to 125 degrees before adding the peanut butter and vanilla which I did. I would not want to make this around small children because it needs your full attention and stirring while boiling. This would make a great gift and with a thermometer, it is not hard to make.

Easier Chicken Marsala

Reviewed: Sep. 16, 2005
I loved this! Even though, I doubled the Marsala wine, my husband thought it needed more juice. I served it over thin spaghetti mixed with grated parmesan cheese as recommended by someone else.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Reviewed: Sep. 11, 2005
I probably wouldn't make this again, but everyone thought it was fine. I did use canned diced tomatoes, so that may be the difference.

Banana Cake VII

Reviewed: Sep. 11, 2005
This cake was moist and delicious. Not everyone here likes cream cheese frosting, so I used Butter Cream Frosting II (fabulous) submitted by Kris. I also used two separate pans, and mixed walnuts into the batter for one. Everyone (except for one who doesn't like banana's :o) ) loved it! I will make this again!

Granny Mabel's Best Bar Cookies

Reviewed: Sep. 11, 2005
I didn't think they had too much butter. My daughter and her friend loved them, but I didn't find them worth the calories.

Jamie's Minestrone

Reviewed: Aug. 27, 2005
I was not formerly a fan of minestone, but this soup was a big hit. I borrowed some of the ideas of others. I substituted vegetarian broth for the chicken broth. For half of the tomato sauce I used V8 juice. I used fresh basil, but dried oregano. We like the small shells and put more per bowl than the recipe called for. We enjoyed the grated cheese on top. Except for making it vegetarian friendly for loved ones, I wouldn't stray too far from the original recipe, because it is super!

Down Home Baked Beans

These were very good and so easy! I used Hormel already cooked bacon. Next time I plan to try adding chili powder because I wanted a spicier taste.

Crisp Oatmeal Cookies

Reviewed: Aug. 8, 2005
These were very good. I did not add the coconut or chips. I followed others advice and added 1/2 tsp. cinnamon. I shaped them into balls and rolled them in a sugar/cinnamon mix before baking. I got about 20 medium size cookies. They were easy to make and came out looking nice.

Cinnamon Swirl Bundt Coffee Cake

Reviewed: Jul. 28, 2005
I followed others suggestions and used extra white sugar, brown sugar, cinnamon mix in the middle. I was leary of beginning with a 400 degree oven, but these baked perfectly. I also used bread tins and made 2 smaller cakes. One with nuts and one without. I made a pink glaze (butter, milk, vanilla, and confectioner's sugar, food coloring) for the plain cake and used white glaze for the one with nuts.

To Die For Blueberry Muffins

Reviewed: Jul. 15, 2005
I loved the taste of these muffins! If I could have gotten them out of my cooking sprayed, nonstick muffin tins, I would have wanted to give them more than five stars. I will try them again with oversized tins, NOT filling them to the top. This time I got a mess of delicious large muffin pieces.

This is a five star plus recipe! It's way too good! It's not difficult to make either. I wouldn't want to try it without a candy thermometer.
