Charley's Slow Cooker Mexican Style Meat

I thought I would try this out based on all the other glowing reviews. It was simple to prepare by just placing in my crock pot ans forgetting it. It cooked in the time listed on the recipe and my kids loved it as well. I was scared away by the claims of how hot it was so I cut it in half and after eating it I wished I hadn't. I like it spicy and think the recipe as is wold have been perfect. But when cooking for both child and adult tastes, the half/heat would probably work best. I intend to serve this for a dinner club I belong to and am sure it will get rave reviews, too.

Slow-Cooker Pepper Steak

My family loved this. I did not have the time to make this in the crockpot, so I just made it on the stovetop and it cooked in about 3 hours. Great recipe...thanks!

Margarita Cake

I enjoyed this recipe. I made it for a Mexican themed dinner club and a teacher's appreciation luncheon. I found the glaze to be a little strong so I reduced the amount of tequila by half. I also recommend pouring on the glaze over a wire cooling rack and reapplying until all glaze is used. This keeps the cake from absorbing all of the glaze on the bottom of the cake and making it too strong. I also added green food coloring to simulate "lime margarita" and it turned out really pretty. I garnished and served this with sliced starwberries, sugared limes wheels and a dollop of whipped cream.

Bodacious Broccoli Salad

My husband frowned when I mentioned that I was making this dish to take to a cookout at a friend's house. Boy, did he change his mind after tasting it. Everyone really enjoyed it, I took home the leftovers and that husband of mine requested it be served that evening with our dinner. Pretty presentation as well. Thanks!

Corn Dip

Made this for a party and it wasn't a huge hit. Although I used fresh ingredients and a variety of breads, it just wasn't enough to give it any oomph! My test for an appetizer...nothing left to take home but a dirty dish.

Bread Machine Rolls

Not bad....although my memories of my mom's yeast rolls beat these out. Consistency was a little chewy and hard to form into a round shape. They smelled great while baking, though!

Banana-Oatmeal Bread

My family really enjoyed this bread. I made this loaf and a box of name-brand from the grocer. Although we ate both, when this recipe was gone it was the only one that anyone wanted seconds of. I felt good about the ingredients. It makes an excellent on the go breakfast bread and also perfect for an afterschool snack. My kids get home late in the afternoon and can't hold out until dinner. I feel much better about them having a snack like this...even it it fills them up for dinner.

Fiesta Shrimp Appetizers

This was very good. I kicked up the heat using home grown red and green jalapenos. In fact, I kicked it WAY up! Note to self: Next time less is more. We loved it, but some guests shied away due to the sweat factor. I will also add a little garlic salt...I think that will add nicely to the flavor.

Black Bean and Salsa Soup

I found this recipe to be very easy to make. You can control the heat by what kind of salsa you add. I served this with sour cream and deep-fried tortilla strips. I would make this again.

Excellent flavor! Big hit at my party...for those who like Asian. I cut down the pepper a little so as not to overwhelm everyone and found it was still VERY warm. Although, the longer I cooked it the milder it became. I will cut down on the amount of fish sauce next time, as I found the smell a bit unsettling. Tasted fine, though. I served this from a crockpot after simmering on low for 4-5 hours and it was still great. I found the addition of rice nooodles to be just the right finish. Great Soup!

Cajun Crab Soup

Another hit at my soup and stew party! I really liked the blending of flavors. Many thought it was very similar to a clam chowder. It has just the right amount of spice and heat to give it some zip but not to overwhelm.

Cuban Beef Stew

Loved this! Another hit at my Soup and Stew party. Interesting blending of flavors that only got better the longer it simmered away in the crock pot. Next time I will make it spicy by adding some crushed red pepper or a fresh jalapeno or two. Great Stew!

Filet with a Merlot Sauce

Didn't really care for this one. I found the sauce overpowered the meat and detracted from its 'natural' taste. I also added some fresh mushrooms while cooking which added a little diversity. I probably won't make this again, and would rather just drink a good Merlot with the filet.

Aunt Teen's Creamy Chocolate Fudge

This was very creamy and smooth. My family enjoyed this (I am more of a Peanut Butter Fudge Fan) very much. Next time I think I will layer this with the Creamy Peanut Butter Fudge recipe found on this site and then have the best of both worlds.

Judy's Strawberry Pretzel Salad

Very rich! It would make a great pot-luck recipe. I thought it was a bit more work than what I was looking for and found the pretzel crust to be too hard. Flavors blended nicely though.

Grilled Corn on the Cob

I served this corn for a Texas BBQ dinner party and it was delicious. I prepared just as directed, although I dipped the ears under water prior to shaking the salt and pepper. This seemed to help it "stick" better. Also, I used course ground black pepper. Very tasty. I plan to experiment with different butter mixtures to match the corn to my grilled dishes.

Jalapeno Chicken

This chicken was interesting. It was met with raves at my dinner party when it was served, but I had mixed feelings. The cinnamon was too overpowering and wiped out the earthy flavors of the cumin and chili powder. I personally like it quite spicy so I think I might tweak this a little next time with more red pepper and no cinnamon. The honey, on my opinion, will add just the sweetness needed for the chicken to be outstanding.
