N'Awlins Stuffed Bell Peppers

I love this recipe! It was simple yet delicious. Instead of using ground beef I used ground turkey. I also added green onions to the veggies at the beginning. Before cooking in the oven I topped the peppers with bread crumbs and a little sharp cheddar cheese. Blanching the peppers was a fabulous suggestion, these were ready in about 25 minutes! Will definitely try again!

Lemon Lemony Bread

This bread came out deliciously! I didn't make the glaze but it was great without it! There is a perfect balance between lemon and sweet and it isn't tart at all. I will definitely make again. The only thing different thing I did was use 1/4 cup of butter and 1/4 cup of apple sauce, to reduce the amount of fat.

Thanks for giving a low-fat option. It was delicious. The only thing I changed was to add fresh roma tomates instead of the canned dice tomatoes, and saute fresh onions and garlic before adding the tomatoes and spinach. Will definitely use again.

Chicken Pot Pie I

This was a pretty easy/simple recipe. I used boneless skinless chicken thighs rather than breast because that part of the chicken has better flavor and is better in cooking stew like mixtures. Definitely used more seasons because I could tell this was bland without it. I added a can of cream of mushroom, onion, rosemary, salt, pepper, and a little thyme. I covered the chicken cuts in flour and some seasoning salt before lightly sauteeing it with the soups and seasonings. I didn't bother to cook the chicken before putting it in the oven.

Authentic Louisiana Red Beans and Rice

Pretty decent recipe and authentic. Too much water used (in my opinion). I like thicker beans. I also think there wasn't enough seasoning used for this recipe. I added approximately 2 tablespoons of my own made cajun seasoning instead of the what the recipe called for. I actually don't use measuring cups/spoons that often for creole cooking... you really just have to feel your way through sometimes.

I think this was okay. I think mixing the beans with the sweet potatoes would have produced a better outcome with taste. If I try this in the future, I will do that. Very filling
