Chicken and Broccoli Braid

Used WW pizza dough and omitted the almonds. The dill was unexpected but worked - I did halve the amount. Sauteed the onion, pepper and garlic. Added mushrooms too because they were on sale. Put the filling on the dough first and then cut the strips as suggested and it worked perfectly. Presentation was outstanding.

Baked Honey Nut Chicken

Not sure what the fuss is about this chicken. The honey was a nice touch and made you go hmmm, but this was nothing spectacular. Just a basic baked chicken dish. I may make it again but I won't be serving this for company as others have suggested because I don't think it's all that special.

Cheddar Beef Enchiladas

Only had 8 tortillas and was able to fit them all in a 15" x 10"(?) Pyrex. Stuffed them with 1/3 to 1/2 cup rice/beef mixture. Topped with the entire salsa/soup combo. I poured it down the middle like the recipe asked but next time I will spread it out because the areas that didn't get covered with the sauce got a little crunchy and hard.

Strawberry Bread

This was good. Super moist- maybe too much so the next day. I doubled the strawberries as per the suggestions. I did find the cinnamon to be overpowering so I will cut that in half next time, and there will definitely be a next time. Used 1 cup applesauce and 1/4 cup oil.

Honey Wheat Sandwich Rolls

Loved these. Fluffy but soft enough to smush down to fit in your mouth. Substituted flax seed for one of the tablespoons of butter. Used an egg wash and added some quick cooking oats to the top. Skipped the melted butter. Would love to make these weekly. Got 12 rolls out of the recipe.

Tantalizingly Tangy Meatloaf

My mother makes a delicious traditional meatloaf with cheddar cheese. My brother freaked out when he heard I wanted to make this "weird pineapple recipe." Tonight we had a throw down, this one vs hers. Everyone went for this one, the cheddar one is in the freezer! I doubled the recipe and added half an onion. Also made extra sauce for dipping using crushed pineapple. Brother liked both and said for next time to make which ever is easier-guess that means it measures up to the cheddar one.

Spinach Brownies

My family doesn't like room temperature food so I served it hot from the oven which didn't allow it to set and hold its shape and made it seem like a strata (gasp! we hate stratas so I started to worry) but once on a plate it cooled a tad so it could be cut without all the cheese falling out. Texture is far more gooey than a brownie. I sauteed the onion in 2 tbl spoons butter. Added minced garlic and then sauteed about 16 oz fresh spinach. Combined the rest of the ingredients as per the site except only added an additional 2 tbl spn butter and 1/2 tsp italian seasoning. Will make again but with a mixture of cheeses- Mozzarella by itself didn't really pack the punch I'd like.

Candied Chicken Breasts

This was pretty good. Tasted like Chinese food. Used a little more than a cup of brown sugar and it was still a bit too sweet. I used spicy yellow mustard and it gave it a tiny little kick.

Pasta With Spinach Sauce

You could really taste the condensed soup, it wasn't masked at all. Also thought it required a lot of garlic but you couldn't taste it in the dish at all. 2/4 had seconds but I felt it was just an okay recipe and will not make it again.

Sweet Dinner Rolls

Made it in my KA mixer and then let it rise for an hour. Problem: it didn't double, at best it quartered (and I was bragging an hour earlier about how foamy my yeast was). Had to have it ready for Christmas dinner so I just went with it. Rolled it into crescents (I assumed it'd take a while because so many reviewers seem to make balls but it was really easy and fast with a pizza cutter). The second rise went way better and they puffed even more in the oven. I'm talking HUGE- big enough to use as an actual hot dog roll. Next time I will make them a bit smaller. Only took 9 mins in the oven.

Overnight Caramel Pecan Rolls

Wow. These were so delicious. Never made caramel before and it seemed grainy so I kept it on the heat a little longer and beat it with a whisk until silky smooth. It was perfect. 1 batch of caramel per 9x13 pan and I chopped the pecans a little. The next morning I put them in a warm place for 30 mins but they definitely weren't close to being doubled, put them in the oven anyway and man those suckers puffed up HUGE. Inverted pan onto parchment paper lined baking sheet and immediately ran hot water in the 9x13 for easy clean up. Great Christmas morning breakfast and pretty tasty cold too.

Clone of a Cinnabon

Wasn't sure about how much filling to put in because some reviewers said to half it and some doubled it. I just did the filling as originally written (beat them with my paddle and spread on dough with offset spatula) and everyone at work raved about it. They said it was better than a cinnabon. Boss said he liked the texture of the dough (used AP flour and 1 tsp vanilla). One woman went to some bakery that Oprah had rated Best Cinnamon Roll and said mine were better! She was still talking about them the next day! I doubled the icing but didn't use all of the sugar. Will definitely make again.

Sauteed Apples

Sliced them thinner and added a little less cornstarch so I could pour it over pancakes and have the syrup really soak in. WOW. So delicious. Everyone raved about it and requested I make a pound cake so they could have something to eat the leftovers on!

Cheddar Mashed Potatoes

Tasted like a baked potato. Instead of putting the chives, cheese and bacon as a topping, I mixed them right into the potatoes and skipped the oven step. I skipped the salt because I salted the water but the finish product definitely needed that extra tsp salt. Next time I'm also going to add garlic.

Chocolate Chip Pumpkin Bread

Not a pumpkin fan but I really liked this. Did 1/2c oil and 1/2c sweetened applesauce. Sprayed everything with Baker's Joy and bread slipped out of the pans perfectly. I was EXTREMELY stingy on the nutmeg and didn't miss it one bit. Got 2 loaves and 6 muffins out of the recipe. Will definitely make again. Next time I'll add a splash of vanilla.

Homesteader Cornbread

I swapped the cornmeal and flour amounts and upped the sugar to 1 cup as suggested and it was delicious. Halved the recipe and baked it in a 8x8 for 22 minutes. Will definitely make it again.

Thanksgiving Leftovers Stuffed Shells

If not for the reviews I wouldn't have made this because it sounds gross to me. It was a great way to use up the leftovers, my brother hand seconds and my Dad raved about it. I added extra poultry seasoning because my stuffing was really bland this year. It is the perfect amount of filling for the shells but I couldn't get them all to fit in the suggested pan so I'm freezing the extra for another time.

Turkey Pot Pie

First ever pot pie completely from scratch and the family loved it. I doubled the butter, flour and milk and baked the crust a little prior to filling as per the other suggestions. Added salt to taste. Will make again.

Butter Flaky Pie Crust

Was REALLY easy to make in my food processor, but kept bragging about how I made the crust from scratch. Everyone loved it. My dough was more sticky than crumbly so I think I added too much water (ahem, didn't add it a Tbl spoon at a time, but will next time).
