About this Cook
I am a work at home mom of one son with Asperger's Syndrome. I have a husband and two cats. Because of my husband's health, we were forced to re-think the way we ate. We've chucked boxes and cans in favor of from scratch. Sometimes we cheat, but ultimately most of what we eat is unprocessed food.

My favorite family cooking traditions
Cooking recipes that have been in our family for years- like my husband's gradmother's turkey dressing or my grandmother's spaghetti and meatballs. Or foods from my mom's native country, Denmark, like pickled red cabbage. When I cook, we share stories about the family and the recipe. And my son always tastes to help make sure its seasoned correctly!
My cooking triumphs
Being able to take comfort food and making it into food you don't regret eating, even giving it nutritional value.
My cooking tragedies
Crunchy rice. Under cooked pork roast whose accompanying veggies soaked up the non-stick coating of the roasting pan. We ordered pizza instead.

Danish Christmas Red Cabbage
My mom is Danish. Growing up, she always bought pickled red cabbage in a jar. When I moved to a different state, I found that I could no longer purchase this mainstay of holiday dinners anywhere in my area. I figured out how to recreate it from scratch (coming up with the recipe that is just like this on my own-- Red cabbage must be in my blood!). Now family members are asking me to make this for them and asking if I can can it. Can this be canned like sauerkraut?

Chocolate Lover's Cheesecake
This recipe was perfect for adapting for our family’s dietary needs. I subbed used 1/3 cup + 1 tbl of Stevia and ½ cup + ½ tbl of organic sugar. I replaced one of the packages of cream cheese with Neufchâtel cheese. Instead of butter, I used Smart Balance Blend. I also used low fat graham crackers. To ensure consistency, I used an extra egg yolk. The sour cream was reduced fat. Like many others in the reviews, I melted the chocolate chips. This was by far the tastiest cheesecake I’ve made in awhile. It was also the simplest. I was a little worried that it wouldn’t be set in the allotted time, but I was worried for nothing. The second really made helped bring together the flavors in the topping. I’m not big on toping cheesecakes with sour cream, but this worked. I will say that I’d be fine with no topping at all because the cheesecake doesn’t really need it. The crust was just right, the consistency of the cheesecake was perfect and the taste was spot on. There are no leftovers. If you are hesitating about which recipe to try- go for this one. Its easy and its delicious. What more can you ask for?
