Super Summer Grilled Bluefish
Thanks so much for this recipe! Made it exactly as written and marinated for 2 hours. Heated the gas grill to 400 degrees and cooked 4-5 minutes each side. Wow! The fish flaked nicely, and had a great flavor. No need to add anything after. One note, I couldn't find citrus fish rub, so I used McCormick Grill Mates Baja Citrus Marinade. A 1 oz. Pkg measures 1/4 cup. Will definitely make this recipe again. It's the only way to do bluefish for us from now on!

Delightful Apple Spice Muffins
I really like this recipe. It is virtually identical to "Applesauce Cake" in Joy of Cooking. In fact, this is not a muffin, but a cupcake as someone else has already mentioned. Easier to sSift together all dry ingredients. Add to egg/butter/sugar batter alternately with applesauce. (flour-applesauce-flour-applesauce-flour). Stir in 1 c chopped walnuts and fill 12 regular size muffin cups or one 8x8" baking dish (greased and floured). Bake 20 min. Nice with confectioners sugar sifted over once cooled. Delish!

Butternut Squash Soup
This recipe is fabulous! I was looking for a savory butternut squash soup and this recipe fit the bill. I will say the marjoram is a must as it adds a subtle taste that should not be missed. I make a vegetarian version using vegetable broth - one 32 oz container - and I do not use the chicken boullion cubes and I do not add the water that the recipe calls for. This soup always gets rave reviews. As with other reviewers, I find it easier to roast the squash first, then scoop out the pulp for this soup. I also do not use more than 4 oz cream cheese and I use an immersion blender at the end to make a velvety smooth soup. Thanks, Mary, for a fabulous soup I have made many times now.
