Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Mar. 24, 2011
Awesome, awesome, awesome. Everyone I serve this to asks me for the recipe. I always follow another reviewer's advice and put sour cream, cilantro, lime juice, salt, jalapeno, and cayenne into my food processor, blend it up, and serve it along side. Most of my guests just mix it into their salsa. I also like to dredge the fish in cornmeal before cooking them for a little crunch. Best fish taco EVER!

The Best Meatballs

Reviewed: Mar. 22, 2011
Really yummy! Has the soft texture I have been searching for! The only change I made was to use Pecorino Romano instead of Parmesan cheese. They came out perfectly seasoned and moist. Made a double batch and froze the half. Will make again!!

Beer Braised Irish Stew and Colcannon

Reviewed: Mar. 22, 2011
Sooooo good! Used the slow cooker, so I did have to add two cups of beef broth to keep the veggies under liquid the entire cooking time (7 hours on low). Then I thickened it at the end with some flour because we like a thicker stew. It was amazing! The colcannon was delicious as written! Used the leftovers for shepherd's pie after adding some peas. Two meals in one! Who could ask for more? Try this recipe!!

Irish Soda Farls

Reviewed: Mar. 22, 2011
Wow!! This was so easy and delicious! Made these for my husband along with the Boxty recipe on this site and bacon and eggs for a St. Patty's day breakfast. I did add one tablespoon sugar because he has a sweet tooth. Cooked them in a cast iron skillet and left a lid on them after they were cooked to keep them warm. Perfect! A must try for anyone who wants a quick and perfect bread!

Chicken and Red Wine Sauce

Reviewed: Feb. 6, 2011
Super Yummy! Followed other reviewers advice and reduced brown sugar to 1/4 cup, added 1 cup chicken broth, and used cornstarch to thicken the sauce. Also and some sauted onions and served over quinoa. Will make this again and again!
