Sweet Potato Casserole II

My husband loved this casserole! It was so easy to make, and I made it less hectic at dinner time by preparing the potato mixture ahead of time. Out of the fridge, I popped it in the oven for 10 min, added the marshmallows, and baked till done. My husband will now want this all the time!

S.O.P.P.

This was great! I added some garlic powder and Italian seasoning for kicks. I think maybe next time I will cook the sausage seperately, drain it on paper towels and add it in the last 1-2 min of cooking. I used turkey smoked sausage and it still rendered a lot of fat! Great recipe though, with great flavor! Thanks!

Pico de Gallo Chicken Quesadillas

This was excellent!!!! Wonderful flavor! It does take some time with the chopping but is worth it. I put boneless chicken breasts in the crockpot with a little broth and let them cook all day; they shredded effortlessly and saved some time. I made 2 small quesadillas instead of one large one. The secret to flipping...nonstick pan, Pam and a big spatula!! Will definitely make these again!!

Easy Company Chicken

This was okay, but you REALLY have to love cream of chicken soup....I think next time I'll use cream of celery. Overall good and easy though!

Chicken Breasts with Herb Basting Sauce

I made this with boneless, skinless meat, and it was fabulous!! Just reduce the cooking time to about 25 min. The herbs give it an unusual but great flavor. Will have this again, for sure!!

Potato Salad I

Chicken Enchilada Casserole II

This was great! I only had the 6 inch tortillas so I used 8, used a 15oz can of beans and right around half the cheese. Also used reduced fat sour cream and soup. Tasted great, picky husband loved it!!! Next time I'm going to try it with hamburger. Thanks!

Cottage Cheese Chicken Enchiladas

This was excellent!!! I put the chicken in the crockpot in the morning with a little broth and cooked them on low all day. They shredded beautifully. I also used lowfat cheeses and sour cream and it cut the calories and fat by more than half. WONDERFUL recipe, great change of pace!!!

Slow Cooker Tender and Yummy Round Steak

This was fantastic!! I've always loved round steak in the crock pot, but had never done the whole meal in it. I added some sliced fresh mushrooms before I added the gravy, and it turned out great! Will make this again.

Italian Meatball Sandwich Casserole

This dish was very good, although I found that spreading the cream cheese mixture over the bread was a bit challenging. I made the meatballs the day before, and that cut down on some of the prep time.....very good!!!

Chicken Supreme IV

Fantastic! I also added chopped onion to the mushrooms. Also, instead of shredding the cheese, I just sliced it about 1/4 inch thick and put it on top of each chicken breast. Turned out great, and will be making it again for sure!!!
