Chicken Noodle Casserole I

Very heavy. It was good, but I probably won't make it again. If I did, I'd leave out the sour cream and butter/crackers.

Red, White and Blue Strawberry Shortcake

I made this for two 4th of July parties this year. The first time, I followed the recipe exactly and it was delicious. The second time, I used chocolate cake and it was even better. I definitely will make again.

Slow Cooker Buffalo Chicken Sandwiches

I made the chicken as recommended, but made wraps rather than sandwiches. I put a few fork-fulls of chicken in a tortilla, covered with some shredded lettuce and ranch dressing. Buffalo ranch chicken wraps - yum.

Holiday Chicken Salad

This was fantastic. I left out celery because I didn't have it. The only thing I would do differently is make more (I halved it for a family dinner). I will definitely make again. I served it on croissants and it was delicious, but was almost better by itself.

Slow Cooker Pulled Pork

I did things a little differently. I cooked on low for 7 hours, and then it simmered for another 3 while I was still at work. When I got home, I drained the rootbeer and shredded the pork and let it simmer for another hour in Hawaiian sauce. I served it over rice rather than on a bun. It was AMAZING. The rootbeer really helped make it sweet and it really tasted like the Hawaiian pork that we love so much. I'll definitely make it again.

Peanut Butter Cup Cookies

I didn't use a mini-muffin pan. I'd recommend doing that, as the cookies just turned out flat. Since the chocolates melted, they still looked ok -- but the picture was better. They did get good taste-reviews.

Best Tuna Casserole

It was ok. I added a half cup of milk and it was still too dry. Next time I would use a full cup of milk and switch from Cream of Mushroom to Cream of Chicken or Celery. I used bread crumbs instead of chips and wouldn't do that again either.

Triple Berry Crisp

I used frozen blackberries and raspberries and cut up some fresh strawberries that I already had. I served it warm with Cool Whip and it was delicious. I can't wait for the leftover dessert tonight!

Valentine Cut-Out Treats™

They turned out a little too sticky to be cut into heart shapes. I used red food coloring to make them pink and then just cut them into regular bars and used white frosting to draw a heart on each one. They were good old fashioned rice crispy treats, but did turn out cute.

Mexican Bean and Rice Salad

I made this with black beans, pinto beans and garbanzo beans, cilantro, jalepeno, corn, onion and rice. It is delicious. We ate it spooned into tortilla chips, but would have been good as a salad or in a burrito as well. I'll make it again. It was fast, easy, healthy and tasty.

Cake Balls

They taste awesome but were a lot of work. I used white cake and vanilla frosting, added green food coloring and peppermint extract. I made the cake, let it cool, and mixed the entire can of frosting -- next time, I'd use half the frosting because it was a very gooey mess. I left that mixture in the fridge over night. When I finally rolled the mixture into balls, they were still a bit gooey-hence using half the frosting next time. I froze the balls for 2 hours, and then dipped them into melted chocolate chips, put on wax paper and back into the fridge to set. They are very good, but very rich. If someone else made them, I'd give them five stars... but I'm not sure it was worth all the time. This recipe would be great for a holiday party (the peppermint and green filling), but I'd like to try some other variations as well.

Slow Cooker Chicken Taco Soup

I have this in the crockpot now, waiting for my husband to get home for dinner. I can't stop sneaking spoonfuls. It is amazing! I'm sure it'll be even better with the crushed tortillas and cheese on top. I did use chicken broth instead of beer, but otherwise followed the recipe exactly. Yum!

Mom's Best Macaroni Salad

It was better than I expected, but still a little too sweet for me. My husband, who is a picky eater, loved it though. I'd cut the sugar in half if I made it again. I also didn't add the celery (don't like it) or carrots (didn't have any) but will make sure they're both included next time.
