Kalua Pig in a Slow Cooker

I'm from Hawaii and used to buy this all the time growing up! I finally decided to try making it, and have made/shared it at least a dozen or so times over the years! Below are the changes I make for my version: I add 1 head of chopped cabbage per 6lbs of pork, chopped into thin 1"-3" strips minus ribs & tough inner parts. After it's all done, I separate the meat from the juice, sautee the cabbage in a few spoonfuls of juice, exchange the cabbage and meat in the pot, and slowly mix in the sautéed chopped cabbage and juice until the consistency and taste is just right. Perfect with fresh steamed rice! I've gone to a few BBQ's where I brought 10lbs, and discovered it all gone in 20-30 minutes! Always a hit!

Chicken with Quinoa and Veggies

While visiting my mom, I decided to introduce her to quinoa. The day after I bought it, this recipe showed up in my inbox. We had almost everything needed. Changes I made: added one large chopped portabella mushroom just before cooking the chicken, replaced the garlic scapes with chopped garlic, only had blue cheese on hand, and added a tiny bit of salt, pepper, and powdered chicken bullion to the mix to give a little more flavor. I've cooked plenty of times for my mom who is a tough critic. I'm not sure she's ever complimented me on anything as much as she did w this dish! Def a new favorite!

Honey-Nut Chicken Stir-Fry

On it's own, this is a great recipe... but I really don't like cooking veggies by themselves, so I made a few alterations. 1. Velvet your chicken! Makes a huge difference!!! Google it. 2. I double the chicken, add snow peas, water chestnuts, sliced onion, and mushrooms. 3. For the sauce I added fresh mango juice (I've got a juicer) and double the most of ingredients for the sauce portion, minus a tablespoon of soy sauce. Suddenly this is the best stir fry I've ever made in my life!!
