While visiting my mom, I decided to introduce her to quinoa. The day after I bought it, this recipe showed up in my inbox. We had almost everything needed.
Changes I made: added one large chopped portabella mushroom just before cooking the chicken, replaced the garlic scapes with chopped garlic, only had blue cheese on hand, and added a tiny bit of salt, pepper, and powdered chicken bullion to the mix to give a little more flavor.
I've cooked plenty of times for my mom who is a tough critic. I'm not sure she's ever complimented me on anything as much as she did w this dish! Def a new favorite!
