Amazing Muffin Cups

We loved this! Very good base recipe and easy to substitute lots of ingredients! I made a couple of changes - I used / cup of broccoli instead of red pepper 'cos that's what I had on hand and wanted to use up. This would be great with mushrooms too (IMHO) Also I threw everything in the bowl then put it into muffin tins only because I missed the step making it into 2 steps - worked perfect. I also didn't have any frozen hash browns so I shredded 2 potatoes instead. And I only use 1 1/4 c shredded cheese because that's what I had on hand. I was making some vegetarian so I only added 8 sausages (if you cut them before you brown them they will cook faster), and added a few splashes of Franks Red Hot.

Cheesy Ham and Hash Brown Casserole

I make this almost the same way except I am gluten intolerant so instead of using cream of soup (& sour cream), I make a white sauce (in a saucepan melt butter, add GF all purpose flour and slowly add milk add a bit of dry mustard and S&P to taste. If I don't have any left over ham on hand I will brown ground turkey or ground beef and add that to it instead. this is a huge hit with our family and with the toddlers & preschool kids at the daycare that I cook for as well. I've also used mozzarella cheese when I was short on cheddar or marble - its an all around great recipe - easy to substitute your fave ingredients with

Heavenly Halibut

This recipe is a keeper! I did change it a bit - only because I was using what I had on hand! OMG sooooooo good! I changed the green onions to 2TB parsley, used 1/4 tsp scotch bonnet/mango hot pepper sauce (my own), then realized I didn't have any lemons either so I used 20ml white wine vinegar as per the other reviewer and 10 ml lime juice (from concentrate). Preheated oven to 375, then turned it onto broil and broiled for the 8 min flipped it over added the sauce and broiled for additional 3 min - totally awesome! I served it with Garlic-Dijon mashed potatoes (skins on) and a salad of avocado, tomato, red onions, on a romaine base with aged balsamic vinegar - totally awesome Valentine's Dinner

Black Bean Brownies

love this - I put it in my food processor for about 2 minutes, add 1/2 tsp baking powder and 1/4 c all purpose gluten free flour. I also add an additional 1 tsp of instant coffee and vanilla. No bean taste and fudge-y. In addition to the milk choc chips after I baked it I sprinkled some semi chocolate chips long the top and closed the lids (use tinfoil) for about 15 min. Cool. Amazing!

Caramelized Baked Chicken

I make my own BBQ sauce so used that instead, and cooked mine only for 50 min and they were awesome, for those that are looking to thicken the sauce - try some molasses it will sweeten it up as well.

Real Southern Cornbread

loved this - we added scant cup of old cheddar cheese as well. like others mentioned - its important to just mix the cornmeal mixture and liquid in so its lumpy not over mixed. I make these in a stoneware and spray it with cooking spray and heat in the oven whilst it is warming then pour batter in when it is hot and the oven is heated. Muffins only take mins to cook and freeze beautifully - warm up in oven later for fresh cornbread without the effort great recipe also great if you add jalapeno's for variation

Baked Pita Triangles

I do this using greek style pitas as well - if I want the pitas chewier I only cook them for 4-6 min. can brush with butter if you want. Regardless I spray the, with EVOO and sprinkle half with Parmesan cheese and half with pepper - sometimes with some seasoning salt, and bake directly on rack for about 7 min YUM

Blackened Cinnamon BBQ Chicken

I liked this - my husband found it too vinegary however I used 5 chicken thighs, and then everything else the same except I only used 1 1/2 Tsp nutmeg. And it was freezing rain out so I didn't want to BBQ so I preheated my oven to 550 then when it was hot turned it off and the broiler on and cooked the chicken on the higher rack. We wanted something simple after eating rich food over the holidays and this chicken, basmati rice and steamed asparagus & carrots did the trick!

Roasted Duck

I added 2 tsp garlic to the rub, and a bit of lemon juice, like someone else - I put quartered lemons inside the bird with fresh thyme and basil. Roasted at 400 for 15 min per LB + 15 minutes. for last 1/2 of baking added 1 can mushroom soup (not diluted) to roasting pan, and approx 2 c baby bella mushrooms sliced and 1 c enoyke mushrooms - AWESOME even my 4 yr old and 5 yr old enjoyed it!

Grilled Corn on the Cob

My review is based on my version of this recipe - I take the outer husks off leaving the inner layers on the corn, like some of the others, soak for 15 minutes, but then I peal back the husk (do not rip off), and remove the silk, brush with Extra Virgin Olive Oil and use a BBQ rub or some cumin - use whatever you like) then pull the husk back over the corn, wrap tightly in tinfoil and grill on lower rack or directly over flame for 1-2 min per side then remove to upper rack and close lid of BBQ and grill for 15 min, will be moist and wonderful!

Grilled Greek-Style Zucchini and Chicken

this was great - its now in our rotation - we all loved it - easy way to wow the socks off company in the summer too - try it will grilled peaches drizzled in balsamic vinegar and some homemade ice cream for dessert!

Michigan Beans and Sausage

This was great - I used dried Great Northern Beans - 900g bag, covered with water by 3 inches and boiled for 10 min, then reduced heat and simmered for about an hour and a half. I substituted a LB of bacon for the sausage (or could use pemeal), Then doubled the sauce- omitted the white sugar and substituted cider vinegar for the white vinegar, Baked for about an hour or so.
