Quinoa Porridge with Cinnamon Apples

This is pretty good. I doubled the apple, used honey instead of maple syrup, and unsweetened coconut milk instead of almond milk. It could have used a little bit more sweetener, but not much.

Pork Tenderloin with Balsamic Plum Reduction

Wow! I followed the recipe exactly, except for using 2 tbsp of brown sugar because I was out of honey. The pork was beautiful - moist and perfectly cooked. And the sauce...YUM! This one is going into my regular rotation.

Cucumber, Tomato, and Red Onion Salad

Very light and refreshing. It would be wonderful as an accompaniment to a spicy dish. I ate it on it's own and thought it could use a little spice.

Mulligatawny Soup I

Absolutely amazing! I doubled the recipe, used 3 tbsp of medium curry powder, reduced the butter by half and used basmati rice.

Chicken Curry I

I scaled back the recipe (and the calories) for just my husband and I by using about a pound of boneless skinless chicken thighs, only 1/2 a tsp of cinnamon, 1 large onion, 1 tbsp of olive oil and 1 cup of stock instead of water. I followed the rest of the recipe and simmered on the stove for 1 1/2 hours, stirring every 15 minutes or so. It was amazing!

Italian Bread Using a Bread Machine

Meh. The bread had a nice crust, but the texture was a bit cakey and it had NO flavour at all.
