About this Cook
My cooking triumphs
I am a celiac. So for me & other celiacs I do a lot of baking, cooking & sharing of my cooking & baking meals. I have been able to change reg. recipes into ones I can eat. And I love to cook for others.
My cooking tragedies
When I was first married (60 years ago) my hubbie & I lived with his mother. They went to store. So being a brave new bride I made beef & rice soup--I put a BOX of rice into the broth.. Could not cut it with a knife! Still is talked about.

Jimmy's Mexican Pizza
I make this but I cannot use tort. so I put all on a plate & micro until cheese melts & use all for a dip for corn chips. AND, I put a dab of sour cream on each bite. I also use velvetta cheese sometimes instead of other cheese.

Butternut Squash with Onions and Pecans
Very good. Thank you for the recipe. May I add something for those of us who do the cooking.---For the squash--stick a sharp knife into it several places thru the skin & put it in the microwave for a few min. It will get a bit soft THEN slice into 1" or so rounds THEN peal. It will save a lot of time!!!
