Chocolate Cupcakes

pretty good. i added more cocoa and subbed applesauce for the butter, since i had none on hand. i frosted them with a chocolate/peppermint buttercream icing and they were gobbled up. will make again.

Chicken and Dumplings IV

thank you for the only chix and dump recipe that doesn't call for canned condensed soups or other nonsense like that. i live outside the US and can't find that stuff here, so thanks for a wholesome, stick to your ribs, REAL HOMEMADE recipe. ¡buenisimo!

Tortilla Espanola

In Spain we don't usually add chorizo or black pepper, but I'm sure it will please many a palate all over the world. Authentic Serving Suggestion: Once the tortilla is cooled to room temperature cut it into 1 inch squares and let guests spear them with toothpicks. Olé

Green Onion Dip I

SO GOOD! I slightly altered this recipe since here in Spain we haven't got sour cream, so i substituted plain yogurt. Then to suit my own tastes I put half cup mayo and half cup cream cheese. If you use yogurt BEWARE! If you blend all the ingredients together you will get a soupy mess, so the trick is to chop the onion and garlic very finely (pref. in a blender) and then stir that into the cream cheese and mayo mix. Last but not least, fold in the yogurt. I also added a little garlic salt for some extra kick and the end result was DIVINE if you are an onion lover. My version is definitely not kid friendly.

Classic Tiramisu

next time i'll use more cheese and less whipped cream. i might even put in some unflavored gelatin. the filling was too soggy and with every slice i served the filling just caved more and more into the bottom. that said, i must admit that all 18 of my guests raved and thought it was heavenly.

My Best Clam Chowder

dense chocolatey cake was so easy to make and delicious. i toned my icing down with less C de M and put in melted chocolate to suit my tastes. it was a hit with friends and a rich ending to any special dinner.

Best Brownies

considering the brownie mishaps i've had in the past, i should be thrilled with these. true, the taste is wonderful but they were somewhat flat. maybe i'll double the recipe next time but use only a slightly larger pan...???
