Bread and Celery Stuffing

Delicious and very simple. I toasted the bread in the oven to dry it out. I made turkey broth from the neck and gizzards, and used that along with some drippings from the roasting pan to flavor it. Yum!

How to Cook a Turkey

This was my first time making a turkey. I had a small one, just 12 pounds. It was moist and delicious. The herbs were wonderful. Don't be afraid to try roasting a turkey.

Chef John's Pumpkin Pie

I'm not a big fan of pumpkin pie, but my son asked me to make one for Thanksgiving. This was a delicious pie! I didn't have the Chinese spice, but followed the recipe exactly. It was so easy and it turned out great.

Cranberry Sauce

It hasn't cooled all the way down yet, but just from tasting the hot sauce off the stove, I can tell it will be delicious! I took the advice of other reviewers and used 1/2 cup of brown sugar and 1/2 cup of white, along with 1/4 tsp of cinnamon. This is my first time making cranberry sauce.

Ham and Hash Brown Quiche

I was looking for a recipe to make instead of buying Smart Ones frozen ham and egg scramble. At the suggestion of other reviewers, I used 5 eggs. I thought it was a good ratio of egg to ham. I didn't like the crust. I didn't have hash browns so I shredded a potato, patted it dry, added butter and garlic powder, but the crust was too mushy for my taste. Next time I will boil a potato, cut it up into chunks, and incorporate it into the casserole. I still gave it 4 stars though because the flavor was great.

Sweet and Sour Drumettes

Like other reviewers, I made a few tweaks. I did not add water, and used just 3 tbsp of vinegar. It really was not a sauce, more like a basting liquid, and it didn't have much appeal as is. I added some thai chili sauce, and that thickened it up a bit. Next time I might use honey. I did not fry the drumsticks first, just dipped them in milk and flour, then baked for about 30 minutes. Then I added the sauce and kept basting every few minutes. The sauce had good flavor, but after you bite into the drumstick, all you get is baked chicken. For that reason, next time I might try de-boning the chicken after baking, then basting the small pieces in the sauce. Or maybe do chicken breasts in the crock pit, shred, then baste. The base recipe is a good combination of flavors, it really was sweet and sour and tasty, but for my tastes, I will apply it differently since I like things covered in sauce.

World's Best Lasagna

Oh my, so so so good! I haven't made a lasagna in years, but I wanted to make one for Christmas dinner. It's worth all the work! I added an extra can of tomato sauce and left out the fennel seeds ($5 for a jar and my kid is kinda picky, worried he wouldn't like it with extra fennel, the sausage had plenty). I bought a disposable foil pan and used all 20 noodles for 4 layers. Next time I might use more ricotta if I am going to do 4 layers again. I was able to freeze a few pieces for an easy dinner later. I highly recommend this recipe!

Curried Coconut Chicken

This turned out great! I only used 1 1/2 pounds of chicken because I like a lot of sauce to coat the rice and veggies. I served it with saffron rice and steamed broccoli. Next time I might leave out the tomato sauce. I used 3 tbsp. of curry and light coconut milk. I will definitely be making this again!

Baked Oatmeal I

Excellent! It tasted like an oatmeal cookie. Like other reviewers, I used natural/unsweetened applesauce instead of oil. I didn't have quick oats and used regular oats, so I added about 1/4 cup extra milk. Also switched 1/2 c sugar to brown sugar. Added a lot of cinnamon, didn't measure, just kept shaking it in the mix. Made it for breakfast at the office, everyone loved it.

Spinach Lentil Soup

Easy to make and very tasty. I used a can of diced tomatoes with seasoning instead of the salsa. It was thick, not soupy, but that's the way I like it. If you want a more brothy soup, add more water. My lentils were tender in about 35 minutes. This was my first time trying lentils, I really like this. You can beat the price either!! I'm trying eat less meat (organic, grass fed is just too expensive), so I was looking for alternate sources of protein. Lentils have lots of fiber and protein. $1.99 per pound for organic green lentils from the bulk bin at my grocery store. This recipe is definitely going to be a regular part of my diet!

Very tasty cornbread. Next time I might add corn. I didn't mix the ingredients as directed, it seemed like I would end up with too many dirty bowls. I creamed the sugar and butter, then added egg, dry ingredients, and then the milk.

Mom's Best Pork Chops

I've been making pork chops this way for years! I also make chicken nuggets with saltines (no baking though). I use Paul Prudhomme's pork or chicken seasoning. You can add whatever spices you like to the coating. I highly recommend this recipe!

One Bowl Chocolate Cake III

This is the same recipe off of a famous label cocoa powder box. But is absolutely delicious! There is also a recipe for Perfect chocolatey frosting on the same cocoa label, and it is the perfect frosting for this cake. YUM!

Angel Food Cake I

Pretty good for my first try at homemade angel food cake. I was torn over which recipe to try. I used this one because it called for cake flour. It wasn't as light and fluffy as I thought it should be, but that could be my techniques and not the recipe. I've made belgian waffles lots of times, so I am pretty good with egg whites. I did use a preheated oven. All in all, it was quite delicious. My son wanted chocolate frosting on it, so I used the recipe on the label of Hershey's cocoa, halved it, for just a very thin layer. I think next time I will try the Heavenly Angel Food Cake recipe. It called for powdered sugar.

Easy Red Beans and Rice

Pretty good. I used spicy pork sausage because I am not a big fan of turkey kielbasa, also left out the green pepper. It wasn't quite spicy enough for me so I added quite a bit of cayenne. This is an easy dish to whip up over the weekend and then take the leftovers for lunch during week.

Banana Crumb Muffins

Blonde Brownies I

Delicious! I used 2 tsps of vanilla instead of the whole tablespoon. Very tasty! It didn't seem like there was much batter, but it turned out to be the perfect size treat for me and my son. I would double the recipe though, if baking for a crowd.

Sausage Spanish Rice

This dish was easy to make. I left out the celery (I don't like it), and used diced tomatoes with chiles, skipped adding salsa. I served with a little bit of low fat sour cream. I did have to simmer for about 50 minutes for the rice to get tender. This is a great dish to make if you like to have leftovers to freeze.
