Chocolate Zucchini Muffins

Yummy! These muffins are perfect. They are moist, soft, rich, and full of flavor. I sprinkled a couple of chocolate chips on top of each muffin. I will definitely use this recipe again!

Cooking Light magazine's Zucchini Bread

This zucchini bread is so good - and you wouldn't know that it's light! I used 1/2 all-purpose flour and 1/2 whole wheat flour to make it a little more nutritious. It was just so perfect!

Cassie's Zucchini Brownies

Very tasty and easy to make - and a great way to use up the giant zucchini I got from my mom! These were more cakelike than I like in a brownie, though - so perhaps they would more appropriately be labeled a chocolate zucchini cake?

Banana Bread Cookies

I did not like this recipe at all. I followed it precisely, and the cookies came out flat and way too soft. I don't mean "chewy soft," but instead, they were unpleasantly soft. It was a waste of ingredients because I ended up throwing most of the batch away.

Peanut Butter Bars I

Oh my gosh! These are sooooo yummy!!! They're super-easy to make, too. They taste just like a Reece's Peanut Butter Cup. Wow. These are a definite keeper.

Banana Oat Muffins

Wow! These are great! I used half white flour and half whole-wheat flour, to make them a little more nutritious. I also added some semi-sweet chocolate chips. Definitely a keeper!

Pumpkin Chocolate Chip Muffins

Wow! These muffins are so yummy! I left out the nutmeg, because my husband strongly dislikes it. I found that milk chocolate chips work just as well as semi-sweet chocolate chips, and I had no trouble using liquid egg substitute in place of eggs. I will definitely make these again and again!

This recipe was okay. I love Thai food, and this soup could be really good with a few changes in the recipe. First of all, 2 tsp. of crushed red pepper would ruin the dish. I used 1/2 tsp. crushed red pepper, and the soup was still very spicy. Second, 1/4 cup fish sauce is too much. I used 3 Tbsp. and still found it overwhelming. Third, 10 ounces of coconut milk is not enough. I would recommend reducing the amount of water and using one-and-a-half or two 15-ounce cans of light coconut milk. I did not find the bok choy a necessary ingredient, and instead, I would add rice noodles. With these changes, I will probably make this recipe again.

Super Sloppy Joes

Yummy! I used a whole large onion, a whole bell pepper, three stalks of celery, and a whole 15-oz. can of tomatoes. To make up for this extra bulk, I added extra ketchup, steak sauce, and Worchestire sauce. I also used fresh minced garlic instead of garlic salt, dijon mustard instead of mustard powder, I eliminated the paprika, and I added salt and pepper. I will definitely make this recipe again!

Honey Oatmeal Bread I

This is the second recipe I tried in my new bread machine, and it came out okay. The flavor was good, but the loaf was small, dense, and the crust was very hard. This may be the fault of my bread machine. However, since I made this recipe, I have had great success with other recipes in my bread machine.

Pizza Dough II

Perfect pizza dough! It keeps in the refrigerator, too. I made this five days ago, and baked half of it right away. I baked the other half today, and it was great. I baked it for 10 minutes, and then took it out to add the toppings, and continued baking for another 10 minutes. My guests loved it (as did I)!

Jeanne's Slow Cooker Spaghetti Sauce

Yummy! For the meat requirements, I used 1/2 pound of ground turkey and 1 pound of Italian chicken sausage (instead of ground beef and kielbasa). I used zucchini instead of yellow squash, and I added chopped celery. I used fresh basil instead of dried, and freshly-ground pepper instead of whole peppercorns. The tomato paste I used was pesto-flavored, and my can of tomato sauce was 15 ounces (instead of 10 ounces). Also, I found 2 Tbsp. of olive oil to be plenty for cooking the vegetables. All of this made a wonderful spaghetti sauce!

Florentine Artichoke Dip

Yummy! I used fat-free sour cream in place of the mayonnaise, and for the cream cheese requirements, I used one 8 oz. package fat-free cream cheese and one 8 oz. package neufchatel (1/3 less fat) cream cheese. I also found 1/2 cup (2 oz.) of finely grated parmesan-reggiano cheese to be plenty. Everyone loved it. My husband said that next time I make it, I should leave out the lemon juice, but I did not mind the slight tang.

Chicken Lo Mein

This recipe was good - but nothing special. I have made better stir-fries, so I probably won't use this recipe again. I added red bell peppers and zucchini, which definitely helped. I followed the rest of the instructions just about perfectly. It did make a satisfying dinner.

Deep Dish Brownies

These brownies are delicious - and the texture inside is great. I followed the reviews of others and used just 2 eggs, and omitted the baking powder. I made a variation on these brownies - I used peppermint extract instead of vanilla extract, and I sprinkled Guittard mint chips on top of the brownies, before baking. They were wonderfully minty and a huge hit. The only things I was displeased with were the facts that the top was very crumbly, and the brownies became higher (when cooking) around the edges of the pan. For this reason, I will continue to look for another brownie recipe.

Beth's Chocolate Chip Cookies

My husband said these are the best chocolate chip cookies I have ever made! After making the dough, I put it in the freezer for about 1-1/2 hours. I then put the dough on the cookie sheets in thick 2" x 2" circles (rather than drops). The consistency and flavor were perfect, with a baking time of 10 minutes. Wow!

Cooking Light magazine's Mexican Chicken Casserole

Wonderful! I ended up using just 9 of the 12 tortillas called for - that cut a few calories that were not missed. Most of the chicken broth was absorbed, so there was none leftover to "reserve." I made the mistake of adding a few canned chipotle peppers - we had to smother each bite with fat-free sour cream to cool the heat! Next time, I will leave out the chipotles, so that I can really enjoy this simple, tasty dish.
